Potato Leek Soup! So soothing, creamy and tasty! We roast potatoes w/ skin and garlic, combine it with sauteed leeks, and a bit of corn. Then we season it with parsley, thyme and marjoram. Calories are about 180 per serving.
Curried Veggie Soup!  One of our frequent requests – this is a curry, gingery, peanuty vegetable soup, with carrots, black beans, bell pepper, and spinach. I think it’s also one of my favorite soups. So much fiber, flavor and nutrients! (150 calories/serving).

Tomatillo Soup!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top
Sweet-and-Sour Sauerkraut!  You say you don’t LOVE sauerkraut?  Did you know how beneficial fermented foods are?  No?  Then, go Google it and decide for yourself.  Instead of Kim-chi, we make this turbo-charged side dish with sauerkraut, tomatoes, allspice, cumin, onion and garlic which makes it unique and yummy. Best served warm, but anyway is terrific!  Less than 100 cals/serving.

Tomato Cucumber Bliss! This is one of my favorites for FRESH and FLAVORFUL! . This delight includes tomatoes, cucumber, red onion, chopped parsley, marinated in a tart vinaigrette and a pepperchini topper. Less than 100 cals/serving!

Dilly Beets! This a lovely side dish that can be served cold or warm. Roasted beets with sweet onion and walnuts, tossed in a tasty fresh dill vinaigrette. Great alone or on a bed of greens.  About 130 calories per serving.!.

Mexi Corn Chowder!  You know you want it.  Warm tastes of peppers and cilantro with the comfort of corn -potato chowder.  This was posted by Chef Shafer so you can trust it.  Has dairy (and corn) in it.  Yum at 240 calories.
Greek Orzo Side! All things fresh, flavorful and filling!  It’s an orzo (grain base), then tossed with artichoke hearts, chickpeas, lemon, oregano, olives, parsley, red onion, red pepper and cucumber. Don’t be scared at the 200 calories, just savor and realize its a meal!

Asian Slaw!  It’s raw, with a flavorful sesame dressing. Cabbage is mixed with toasted almonds, orangey cranberries, toasted sesame seeds, bell peppers, and cilantro.
