Soup Calendar: 4/30 – 5/4

The first new recipe is Mulligatawny Soup.  This Indian-based flavor is curry-filled and spectacular.  You may request a vegan version by Saturday Morning, otherwise, the soup will include a bit of cubed chicken. Other ingredients include brown rice, apple, grated carrot, celery, green pepper, spinach, and Indian spices. Calories are less than 200/serving.

Kale SlawYup. another new recipe!  I finally succumbed to a Raw Kale Slaw.  Trust me, I was as cautious as you. But… it’s good.  Kale, cabbages, carrots, onion, sun-dried tomato, toasted sesame… and maybe some Parmesan cheese (optional if you request by Saturday morning), all mixed in a sweet/tart dressing.  We may have a whole new outlook on life! Less than 140 cals/serving.

Velvet Green SoupPlease enjoy our Green Velvet Soup mid-week. She ain’t pretty, but a ton more flavor than a typical pea soup.  There is many flavonoids, pureed in this, including broccoli, split pea, zucchini, spinach, celery, potato, herbs d Provence,

and more.  It’s a surprising favorite and you will immediately feel the nutrients activating your body.   Each serving is about 130 calories.

Quinoa PilafA wonderful side to such a nutrient-based smooth soup is our Quinoa Pilaf.  Kinda sweet, nutty and tart, with nuts, cranberries/currents, green onion, herbs and parsley in a tart dressing.  It’s a personal favorite and worth trying!  It’s about 150 calories and contains plenty of protein from the quinoa.

Feel like a dip?  It’s a Spicy Indian Bean Dip.  Made of pinto beans, tahini, mint, cardamon, cumin, and chili seeds.  Its flavorful and low calorie!!!.  Let’s try it with some celery!  It’s a filling and healthy snack with lot’s of  fiber, protein and joy.

Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor!  So fresh, they are only available for delivery/pickup on Monday and Wednesday!   Featured is a Cari Special Garden Salad.  This week’s salad includes:  mixed spring greens/ romaine, herby couscous, radish, snap beans, parsley/pepper/green onion, carrots, red onion, cranberries, sliced toasted almonds, peppercinis, olives, and avocado (if they are the right ripeness), with a home-made country french vinaigrette.

Soup Calendar: 4/23 – 4/27

Back by demand, we offer Dad’s Hot Meaty Chili.  We toned the heat down a tad, but kept all the flavors.  So, don’t be scared, but do be warned its got a kick to it!  The chili includes beans, ground sirloin and brisket.  The serving size is about 8 oz and about 200 cals/bite.  We will serve it with tortilla chips on the side.

Chickpea SaladA rich treat along side of your chili would be our Chickpea Salad. So much flavor wrapped around a garbanzo, including, lemon, lots of fresh basil,  fresh parsley, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy!

 

Bean Kale SoupPlease enjoy our White Bean n Kale Soup mid-week. It will be flavorful, filling, and good for you!.  It includes an assortment of veggies and seasoned with fresh rosemary, thyme and Serrano chili.

 

Fennel SaladA cooling Apple, Celery, Fennel Slaw goes nicely with any meal.  No mayo on this healthy alternative slaw, with flavorful herb vinaigrette, and tart apples, fennel, and an orange slice.

 
Feel like a dip? Sun-dried Tomato n Bean Spread is your dip for this week.  Very low fat and super flavorful, with white beans, sun-dried tomatoes, lemon, rosemary and sage. Enjoy it with our celery sticks. It’s flavorful and healthy snack filled with fiber, protein and joy.

Start you week off (and ween yourself off of the holiday faire) with our Minestrone Soup.  Fresh, flavorful and a favorite of many of our Soup Group.  Includes zucchini, tomato, kidney beans, fresh basil, and ditalini pasta, Less than 150 calories per serving.

color logoFrom the other side of the world, we’ll prepare our Thai Cucumber/White Bean Salad.  Yeah, kinda a weird combination, but hey… it will excite your taste buds.  This side dish includes the title ingredients with accents of coconut, lemon grass, ginger, red pepper, basil, and jalapeno.  I love it and think you will too.

How can we follow up with that start?  How about some hearty, un-beefy Rich Barley w/ Shrooms Soup.  It’s vegetarian but will have the savory rich taste that belongs with barley and mushrooms.  What more can we say?!

Along side is a new experience.  You say you don’t LOVE sauerkraut?  Did you know how beneficial fermented foods are?  No?  Then, go Google it and decide for yourself.  Instead of Kim-chi, we are trying out a turbo-charged Sweet-and-Sour Sauerkraut side dish.  Tomatoes, allspice, cumin, onion and garlic make this dish the best out there.

Soup Calendar: 4/11 – 4/13

So so good, it’s our Carrot n Ginger Bisque.  A creamy carrot bisque with browned onions and ginger.  I make it with organic half n half, but if you request a vegan option, I will make it creamy with coconut milk. Please request by Monday if you prefer a vegan soup!

zuchinni slawSo what goes with our soup?  How about a raw, vegan Zucchini Slaw.  It’s cool, sweet n tangy, with  zucchini, onion, bell pepper, pineapple juice, vinegar, and basil.  Give it a try and join in on the adventure!

Back in Force On Wednesday, the 11th

Caring Cuisine is taking a nature fortification (is that legal?) over the holiday weekend.  However, because we truly love what we do, we are back in action to serve you FRESH, tasty, good-for-you, cuisine for mid-week.  So enjoy you holiday feasts and leftovers and know that low-calorie and nutritious food is awaiting you as early as Tuesday night!
