Asian Vegetable Soup – NEW!!! I was in the mood for a brothy soup. This will hit the spot. Asian flavors with a bit of spiciness; ginger, mushrooms, bok choy, snap peas, bean sprouts, kale, cilantro, and red pepper flakes are just a few of the ingredients.  This soup also include tofu.  If you prefer NO TOFU, please pre-order by Saturday.  This soup is great for dieters at only 90 calories per serving.

Oriental SlawOriental Slaw! In the theme of the cuisine, we are serving a favorite! It’s raw, with a delicate sesame dressing. Cabbage is mixed with green onion, carrots, bean sprouts, toasted sesame seeds, almonds, bell pepper, jalapeno, and cilantro. A nice low-calorie side or snack at 70 calories per serving.

Greek Lemon SoupGreek Lemon Soup!    It’s got that greek thing going on… lots of lemon in a chicken broth base.  We will add some brown rice, chick-peas, veggies and egg yolk (for richness).  Only 125 calories per serving!

 

Three-Plus Bean Salad – NEW!!!  Our bean salad includes green beans, kidney beans, garbanzo beans, roasted corn, white and green onion,bell pepper,  and parsley in a sweet n tart dressing. Would be an excellent stand-alone side or a great topper for your green salad!  About 150 calories per serving.

Red Pepper Hummus! Home-made and delicious! Lemon, garlic, cumin, and roasted red peppers! Not too spicy.  So good it doesn’t need tahini. Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Soup Calendar: 6/18 – 6/22

Corn & Potato Chowder! This chowder needs NO meat;  just potato, corn, onions, green pepper, parsley and perfect seasonings.  It has a touch of heat and eastern seaboard seasonings.  This soup includes limited dairy. It’s well worth the 250 calories/serving.

Beet SaladHomegrown Roasted Beet Salad! I know we served this no too long ago, but my garden beets are ready to be harvested!  Quantities will be limited, so get your order in fast! Fresh roasted beets with sweet onion, dill, and a light sweetened vinegar dressing, resting on a few romaine leaves.  (about 130 calories/serving).

Mushroom SpinachMushroom & Spinach Soup!  This soup ain’t pretty, but sure is flavorful and rich-tasting!  It’s pureed but still chunky with all sorts of mushrooms (boosts your immunities and lowers cholesterol) and onions, and then laced with spinach. Flavors include garlic, sherry, fennel, and a dash of red pepper flakes. (about 100 calories per serving).

Bulgar Apricot Pilaf

 Bulgar Pilaf w/ Apricots!  Can be eaten cold or warm, this pilaf has tons of almonds, apricot/cranberries, onion, parsley and flavored with allpice, cinnamon, etc.  (about 180 calories and filled with whole grains and fiber).

BruschettaBreadless Bruschetta Diced tomatoes in garlic, olive oil, basil, and capers!  Spread it on some zucchini chips to make a very fresh raw, and low-calorie snack. Of course, we won’t tell if you spread it on a baguette with mozzarella cheese. (about 90 calories/serving)

Soup Calendar: 6/11 – 6/15

Vegetarian Chili!  Many many flavors, some are even a secret, but the result is a hint of sweet-then-spicy!  Ingredients include butternut squash, diced tomatoes, bell pepper, chili beans, corn, celery, jalapenos, chipolte peppers, and sun-dried tomatoes.  And, its only 180 calories/serving with tons of fiber!

Kale and Bean Salad! This recipe has been handed down to me as being deeeeeelicous (from Randal S.).  It has to be, it has bacon in it!  Come try it out with me and I’ll let you know the calorie-count, when I finish cooking it!  I think it’s best served warm, but let me know what you think!

Toasted Rice SoupToasted Rice Soup!  Amazing taste with toasted long-grain rice, spinach, onions, lemon zest, and a hint of nutmeg in a vegetable broth.  I’ll include some Parmesan cheese as a topper to make this a SOUPer delight!   (200 calories/serving, inc the cheese)
