Spicy Chicken Sausage Soup!  Time for a Tex/Mex yeee-hah kick!  Not quite chili, but some wonderful warm flavors.  I am cooking this by request, so order and taste what all the talk is about!  It includes some spicy chicken sausage, beans, hominy, kale, chipolte, jalapenos, and more spices!  Yum at 240 calories.

Sesame Beans

 Sesame Green Beans! Can be served cold or hot, and best when eaten with your fingers.  Super low-calorie (less than 70 cals/serving) makes this a sin-less side dish!

Minestrone  

Minestrone Soup! Fresh, flavorful and a favorite of many of our Soup Group.  Includes zucchini, tomato, kidney beans, fresh basil, and ditalini pasta, Less than 150 calories per serving.


 

Harvard Beets Harvard Beets!  Since you are family, I’ll share this dish with you.  Best served warm, these little jewel-colored roots are simmered with a sweet/clovey sauce.  My mouth is watering just thinking about it.  Calories are reasonable, trust me.

Hummus Roasted Garlic Hummus!  Simply delicious! Lemon, garlic and more roasted garlic, cumin, and home-cooked chickpeas.  Perfect balance and texture topped with a sprinkle of brightly flavored pomegranate.  Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Soup Calendar: 7/23 – 7/27

Cari’s Favorite Soup! We may not have liked our parents/friends playing favorites, but soup don’t mind.  I literally lick the bowl with this herby,  lemony, textury, nutritious, low-calorie soup.  I will make enough for all of us, but be sure to pre-order!  Oh, you want to know what’s in it, rather than just follow my suggestion?  Ok, it has chard, spinach, kale, white beans and barley, flavored with green onion, dill,  mint, fennel fronds and lemon, in a vegetable broth.  If you have some Feta cheese, it would make a great topper!   Only 140 calories/serving.

Karmic Carrot

 Karmic Carrot Salad!  Thinly sliced carrots is the magic in this side dish.  Add some almonds, dill, cranberries, honey, and some savory spices, including cinnamon, garlic, and cumin, and you may transform metaphysically! .  Each serving is less the 100 calories.

Gaspacho Fresco Gazpacho! This is a perfect summer meal!  so fresh with cucumber, celery, tomato, parsley, pepper and a fresh spicy kick! Can be served cold or warm.  I will provide a sliver of avocado while supplies last!  Did I mention this is the perfect low-calorie meal?   Our generous serving is only 90 calories.

Lentil Salad Mediterranean Lentil Salad!  A refreshing salad filled with protein, good fiber and delicious seasonings.  The lentils are mingled with carrots, bell pepper, red onion, scallions, and parsley in a tasty exotic tangy dressing.  You won’t be disappointed. It’s one of the souper’s favorites at 230 cals (its those nutritious lentils!)

Mediterranean  Chowder! We have served this before under a different name, but I re-branded the name because many were intimidated by that purple vegetable called eggplant.   Give it a try:  It’s so refreshing, exotic, and nutritious!  Flavors include a tomato base with red pepper, eggplant, and lots of lemon zest and other Mediterranean flavors.   It is also less than 140 calories/serving.

Taboulhee

 Tabouleh! We love this cleansing parsley salad, and hope you do too.  It takes a lot of work to pick off the little leaves and finely chop, so please enjoy all the love that goes into it!  We include parsley, green onion, Roma tomato, mint, fresh lemon and a dash of Bulgar.  Each serving is less the 130 calories.

Lentil SoupLovely Lentil Soup!.  Not yet a fan of the lentil bean?  Trust me, you’ll like this. Gluten-free, yet filling and fantastic; just not blinged out like those other trendy soups.  It has all the veggies you want and plenty of flavor (no curry).  Our generous serving is about 180 calories.
 

Tomato cucumberTomato & Cucumber Salad!   Similar to a Capri Salad without the diary.  This delight includes grape tomatoes, cucumber, red onion, and chopped basil, marinated in a sweet n tart vinaigrette.  Less than 100 cals/serving.

Simply Veggie SoupSimply Veggie Soup.  I suggest ordering by the quart, because it’s that yummy and a great solution for breakfast, a snack, or lunch/dinner.  Only about 90 calories per serving!  Yet, it’s filled with flavors from onions, leeks, carrots, celery, sweet potato, kale, cabbage, tomatoes, etc.  No butternut squash in this batch!  

  

Blackbean SaladBlack Bean Salad! A delicious side with lots of fiber, flavor and protein.  Home-soaked black beans with pineapple, tomato, peppers, corn, green and red onion, and lots of mex flavors!  A great stand alone, side or salad topper!  About 170 calories for our big serving.

 

Carrot n Ginger Bisque!   This is a favorite of mine!  Simple, smooth, super-comfort food!  Carrots, half n half, zippy ginger, and sweetened with caramelized onion.  A great source of beta-carotene! Only 125 calories per serving!  

 

Kale SlawRainbow Raw Kale Salad Back because it was so good.  This raw salad beams with nutritious and offers lots of taste too. Kale, a little cabbage, (no carrot), onion, sun-dried tomato, toasted sesame, all mixed in a sweet/tart dressing.  Less than 140 cals/serving.     

 

Roasted Garlic Hummus! Home-made and delicious! Lemon, garlic, cumin, and roasted garlic!  Enough to ward off vampires!. Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.
