Toasted Rice Soup!  Amazing taste with toasted brown rice, spinach, onions, lemon zest, and a hint of nutmeg in a vegetable broth.  I’ll include some Parmesan cheese as a topper to make this a SOUPer delight!   (200 calories/serving, inc the cheese).

 

Amish Slaw

 Amish Slaw!  This the tart-sweet slaw you find at the best BBQ joints in the south.  There is no mayo in this dish, so it can last (and improve) for weeks!  Includes onion, a bit of carrot, and an outstanding marinade!  (less than 90 calories per serving)


Garden Salad Garden Salad! Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor!  This week’s salad includes:   sunflower seeds, carrots,apple, beans, berries,  bell pepper, parsley, red onion, snap/snow peas, celery, and cherry tomatoes, with a home-made balsamic dressing.   (less than 220 calories/container).

Tortillini Soup Tawdry Tortellini Soup!  Its so good, it’s sinful (yet far healthier than a restaurant version).  Of course it’s filled with love, but I’ll keep us in calorie-control with cheese-filled tortellini, chicken kielbasa, peas, and spinach.  Treat yourself, it’s still less than 250 cals per serving.

Tomato Cucumber

Tomato Cucumber Salad!   We tested this in early July and it was a HUGE SUCCESS.  So get on the bandwagon and try it out.  Similar to a Capri Salad without the diary.  This delight includes grape tomatoes, persian cucumber, red onion, chopped basil and parsley, marinated in a sweet n tart vinaigrette.  Inputs from Marti – thank you!  Less than 100 cals/serving.


Broccoli Floret SoupBroccoli Floret Soup!  Be brave.  Your body will thank you.  This is a yummy soup that I have not made in awhile. Did you know that broccoli is a great source of calcium and protein?  This soup is creamy without any dairy.  The surprise is the broccoli remains in florets instead of being pureed.  It has greens, celery, garlic, and herb tastes with broccoli florets and chickpeas (for even more protein).  A serving is about 150 calories with 8 grams of protein and 7 grams of fiber.

Mexican Quinoa Salad Mexican Quinoa Salad! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn, filled-with protein from the quinoa, and a slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving.

Soup Calendar – 8/13 to 8/17

Simply Veggie Soup!  Is it too soon?  I searched for ideas, and this felt best on my taste buds.  Roasted veggies, greens, deep spices/flavor.  Includes, leeks, carrots, celery, squash, kale, cabbage, corn, tomatoes, etc.   It’s a Caring Cuisine classic and most people order by the quart.  Great for breakfast, meal or snack at only 90 cals per serving.

 
Black BeanSalad

 Southwest Black Bean Salad!   A delicious side with lots of fiber, flavor and protein.  Home-soaked black beans with pineapple, tomato, peppers, corn, green and red onion, and lots of mex flavors!  A great stand alone, side or salad topper!  About 170 calories for our big serving.

 

Split Pea w/ Ham Soup! I must be feeling green this week.  I wanted to offer something without a lot of heat!  Thick, filling, and flavorful.  We include a bit of Italian bacon to make it homey, but the calories will stay below 130 for this yummy soup.

 

 

Bean Sprout Salad Korean Bean Sprout Salad!  Very low calorie (less than 70 calories) and tasty with a light asian flavor.  Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

African Curry Soup African Curry Soup!  Perfect blend of spices and texture .  This soup is a bit sweeter than a Dahl, and boasts flavors including tomatoes, kale, sweet potato, black-eyed peas, corn, bell pepper, sweet curry flavors, and coconut milk. This will be a new soup for many of you since its been a long while since we cooked it up!.  Be adventurous! Lot’s of taste and will fill you up at 250 calories per serving.

 Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, garlic and parmesan cheese.  Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!
