Green Velvet Soup Green Velvet Soup  She ain’t pretty, but a ton more flavor than a typical pea soup.  There is many flavonoids pureed in this tasty soup, including broccoli, split pea, zucchini, spinach, celery, potato, dill, and more.  It’s a surprising favorite and you will immediately feel the nutrients activating your body.   Each serving is about 130 calories.

 

Quinoa Pilaf Quinoa Pilaf!  Kinda sweet, nutty and tart, with nuts, currents, green onion, basil,  and parsley in a tart dressing.  It’s certainly worth trying!  It’s about 150 calories and contains plenty of protein from the quinoa.

veggie curry soup Veggie Curry Soup!  We use the highest quality curry blend in this vegetable soup, with carrots, black beans, bell pepper, spinach and lots of ginger and peanuts flavors. I think it’s one of my favorite soup. (150 calories/serving)

 

Kale Slaw

Rainbow Raw Kale Slaw!   This raw slaw explodes with nutritious and offers lots of taste too. Kale, a little cabbage, (no carrot), onion, sun-dried tomato, toasted sesame, all mixed in a sweet/tart dressing.  Less than 140 cals/serving.
  Homemade Hummus Hummus  w/ Pomegranate! Home-made and delicious! Lemon, garlic, cumin, and tahini!  This traditional hummus is topped with bright juicy pomegranate seeds that burst in your mouth!  Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Roasted Squash w/ Pecan Soup (NEW!!)  Are we ready for Fall?  Let’s launch it with this thick yummy soup inspired by Chef Shafer of the Depot Restaurant.  Trust me it will soothe your tastebuds. Pureed butternut squash onions and pecans blended perfectly!  About 150 cals/ serving. 

 

Pickled Carrots (NEW!!)!  This is a personal family recipe from our Hungarian heritage.  Coin-diced carrots, with onion and pepper, then pickled in a savory-secret blend.  Thank you Grandma!  Less than 100 calories/serving.

  Zesty GaspachoFresco Gazpacho!  This is a perfect end-of- summer meal!  So fresh with cucumber, celery, tomato, parsley, pepper and a fresh spicy kick! Can be served cold or warm.  I will provide a sliver of avocado while supplies last!  Did I mention this is the perfect low-calorie meal?   It’s a Darrel Specialty.  Our generous serving is only 90 calories.

 

Bulgur Dill Salad Bulgar Dill Salad!   So fresh and filling.  We start with a course bulgar and chickpeas, then add cherry tomatoes, cucumber, sun-dried tomatoes, roasted red pepper, lots of dill, and a balsamic dressing.  It’s calorie-dense but filled with fiber! (about 250 cals/serving).

Potato Leek Soup (NEW!!)  So soothing, creamy and tasty … without any dairy.  We roast potatoes and garlic, combine it with sauteed leeks and cauliflower.  Then we season it with parsley, thyme and marjoram. And finally, give it some texture with a bit of corn.   Calories are estimated at about 180.

 

Tabouleh Salad

Zucchini Ribbons n Tomato!  This is our RAW food version of pasta.  Thin slivered zucchini, grape tomatoes and roasted peppers in a sun-dried tomato pesto marinade.  Slippery never tasted so good!
Less than 100 calories/serving.

Zucchini Tomato Soup!  It’s got an italian zip, with more!  A thick soup with pureed zucchini and onion, a richness from a bit of chicken Italian sausage, and filled with many extra tasty veggies.  It’s like minestrone without the beans or pasta (which means its good for the gluten/legume sensitive folks out there).  About 140 cals per serving.


Lentil Salad Mediterranean Lentil Salad! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and tons of spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.

Vegetarian Chili (mild)! Many many flavors, some are even a secret, but the result is a hint of sweet-then-spicy!  Ingredients include mushrooms, beans, diced tomatoes, bell pepper, corn, celery, cilantro, chipolte peppers, and sun-dried tomatoes.  And, its only 180 calories/serving with tons of fiber!

Tabouleh Salad

Tabbouleh w/ Quinoa!  We love this cleansing parsley salad, and hope you do too.  It takes a lot of work to pick off the little leaves and finely chop, so please enjoy all the love that goes into it!  We include parsley, green onion, Roma tomato, mint, fresh lemon and a dash of quinoa.  Each serving is less the 130 calories.

Carrot BisqueCarrot w/ Ginger Bisque!  This is a favorite of mine!  Simple, smooth, super-comfort food!  Carrots, half n half, zippy ginger, and sweetened with caramelized onion.  A great source of beta-carotene! Only 125 calories per serving!

 

 

 

Thai Cucumber Thai Cucumber & Bean Salad! Yeah, kinda a weird combination, but hey… it will excite your taste buds.  This side dish includes the title ingredients with accents of coconut, lemon grass, ginger, red pepper, basil, and jalapeno.  I love it and think you will too.
