Soup Calendar: 10/29 – 11/2

Dad’s Hot Meaty Chili!  We toned the heat down a tad, but kept all the flavors.  So, don’t be scared, but do be warned its got a kick to it!  The chili includes beans, ground sirloin and brisket.  The serving size is about 8 oz and about 200 cals/bite.  We will serve it with tortilla chips on the side. No pictures.. we want no evidence!

Simply Veggie Soup Simply Veggie Soup!  I suggest ordering by the quart, because it’s that yummy and a great solution for breakfast, a snack, or lunch/dinner.  Only about 90 calories per serving!  Yet, it’s filled with flavors from onions, carrots, celery, roasted sweet potato & butternut squash, cabbage, tomatoes, etc.  Includes chicken broth.

Apple Pilaf- NEW!!  Earthy leeks, nutty pecan, apples, and a rice/barley blend make this sweet pilaf a standout. We’ll keep the serving size to less than a cup so that the calories stay below 200.

Mulligatawny Soup Mulligatawny Soup! This is an Indian-based recipe. I have made it before and do not know why I have no photos, so I pirated a photo on line. Ingredients include chick peas, rice, apple, grated carrot, celery, green pepper, spinach, and Indian spices. Includes chicken broth. Calories are less than 200/serving. 

Veggie Calico NEW!!  This is a zucchini salad with black beans, corn, bell pepper, green onions and a little avocado.  All coated with a zippy limey dressing.  Colorful and good for you!

 

Hummus w/ Promegranate Hummus  w/ Pomegranate! Home-made and delicious! Lemon, garlic, cumin, and tahini!  This traditional hummus is topped with bright juicy pomegranate seeds that burst in your mouth!  Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.  

 

Chinese Green SaladGarden Green Salad! Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor!  This week’s salad includes:  sunflower seeds, carrots,apple, beans, berries,  bell pepper, parsley, red onion, snap/snow peas, celery, and cherry tomatoes, with a home-made balsamic dressing.   (less than 220 calories/container).

Natural Protein Bars!  Handy, tasty, healthy, and chemical/preservative-free (so much better than the commercial ones that stay on the grocery shelf for a year!).  Each bar contains 16 grams of protein and only 180 calories.  This is a great snack/breakfast solution for busy day. Corn Potato Chowder Corn & Potato Chowder! This chowder needs NO meat;  just potato, corn, onions, green pepper, parsley and perfect seasonings.  It has a touch of heat and eastern seaboard seasonings.  This soup includes limited dairy. It’s well worth the 250 calories/serving.

 

Three Plus Bean Salad!  Our bean salad includes green beans, kidney beans, garbanzo beans, roasted corn, white and green onion,bell pepper,  and parsley in a sweet n tart dressing. Would be an excellent stand-alone side or a great topper for your green salad!  About 150 calories per serving.

Mushroom Spinach Soup  Mushroom & Spinach Soup!  This soup ain’t pretty, but sure is flavorful and rich-tasting!  It’s pureed but still chunky with all sorts of mushrooms (boosts your immunities and lowers cholesterol) and onions, and then laced with spinach. Flavors include garlic, sherry, fennel, and a dash of red pepper flakes. (about 100 calories per serving).

Sweet-and-Sour Sauerkraut!  You say you don’t LOVE sauerkraut?  Did you know how beneficial fermented foods are?  No?  Then, go Google it and decide for yourself.  Instead of Kim-chi, we make this turbo-charged side dish with sauerkraut, tomatoes, allspice, cumin, onion and garlic which makes it unique and yummy.

 Bean n Kale Soup White Bean n Kale Soup!  A wonderful soup for Fall. It will be flavorful, filling, and good for you!.  It includes an assortment of veggies, including fire-roasted tomatoes, butternut squash, kale, white beans,  and seasoned with fresh rosemary, thyme and Serrano chili.

Italian Collards Italian Collards!  It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more.  I do put just a bit of bacon and bacon fat in this dish, YOU CAN REQUEST NO BACON BY SATURDAY. About 130 (or less) calories per serving.

Barley Veggie  Soup Barley-Veggie Soup (NEW!)  You’ll feel so good after enjoying this soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too.  Lots of veggies, lots of flavor; its that simply delicious. About 160 calories/serving.
