Fall Harvest Salad Fall Harvest Salad!  We are bringing back this full flavored side dish for your seasonal enjoyment!  We bring together the flavors of fall with roasted sweet potatoes, walnuts, celery, apples, raisins, and parsley with a flavorful citrus/ginger dressing. Packed with fiber and nutrients, about 190 cals/serving.

Brazilian Black Bean Brazilian Black Bean Soup – NEW!!  Brazil… a bit of exotic latin flavor in a hearty, healthy soup. And, I’m told it freezes well.  This is a semi-pureed soup with a bit of garlic, cumin, coriander and laced with sherry and orange juice, and a bit of red onion and bell pepper.  It can be vegan, but only if you request by Saturday.  Otherwise it will be garnished with bacon crumbles.  Calories are 200-240 per serving.

Karmic Carrot Karmic Carrot Salad!  Thinly sliced carrots is the magic in this side dish.  Add some almonds, cranberries, honey, and some savory spices, including cinnamon, garlic, dill, and cumin, and you may transform metaphysically! Each serving is less the 100 calories.

Roasted Fennel and Cauliflower Soup! This smooth, soothing soup will not only warm your taste buds, it will cure your gastro ailments.  Fennel provides an excellent source of potassium, vitamin C, and fiber. In addition, herbalists refer to fennel as an intestinal antispasmodic that relieves intestinal spasms or cramps.  This is a vegan, low-calorie, delicious meal!  About 160 cals per serving.

Lemony LentilsLemony Lentil Salad! Lentils are special!  Packed with fiber, protein and very sustainable!  Let’s celebrate them with this refreshing salad, including tri-color bell peppers, green onions, lemon, tarragon, Dijon mustard, and seasonings. It’s going to fill your mouth with freshness! (about 190 calories).

Tomatilla Soup New!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillas w/ hominy, a variety of chilies, diced tomatoes, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. Classic Turkey n Wild Rice Soup!  I want to offer a turkey soup (before the family stress) that will fill your soul! This is a classic recipe, but I have modified it to keep the calories in check.  There is turkey, celery, mushrooms, parsley, carrots (not shown),  brown and wild rice, dairy and herbs. I’ll add (gasp) a few  bacon crumbles to give it panache.  About 200 cals per serving. DIARY-FREE AVAILABLE IF REQUESTED BY SATURDAY.

Mexican Quinoa Mexican Quinoa Salad!  Want to rebel against the traditional holiday feast, or just have an alternative dish?  Order this zippy light side (which can be a meal) as reserve! It’s naturally sweet from the corn, filled-with protein from the quinoa, and a slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving.

Barley n Greens Soup! This is my favorite soup.  I literally lick the bowl with this herby, lemony, texturey, nutritious, low-calorie soup.  Trust me, you’ll like it!  Oh, you want to know what’s in it, rather than just follow my suggestion? Ok, it has spinach, kale, chard, and barley, flavored with green onion, dill, mint, fennel fronds and lemon, in a vegetable broth.  We include a Feta cheese topper.   Can be customized with NO FETA TOPPER if requested by Saturday.  Only 140 calories/serving.

 

Bean Sprout Salad Korean Bean Sprout Salad!  Very low calorie (less than 70 calories) and tasty with a light asian flavor.  Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

Tortillini Soup   

Tawdry Tortellini Soup!  Its so good, it’s sinful (yet far healthier than a restaurant version).  Of course it’s filled with love, but I’ll keep us in calorie-control with cheese-filled tortellini, chicken kielbasa, peas, and spinach.  Treat yourself, it’s still less than 250 cals per serving.

Lovely Lentil Soup! Not yet a fan of the lentil bean?  Trust me, you’ll like this. Gluten-free, yet filling and fantastic; just not blinged out like those other trendy soups.  It has all the veggies you want and plenty of flavor (no curry).  Our generous serving is about 180 calories.

 

Sesame Green Beans Sesame Green Beans!  Can be served cold or hot, and best when eaten with your fingers.  Super low-calorie (less than 70 cals/serving) makes this a sin-less side dish!

Broccoli Floret Soup   

Broccoli Floret Soup!  Did you know that broccoli is a great source of calcium and protein?    This soup is creamy without any dairy.  The surprise is the broccoli remains in florets instead of being pureed.  It has greens, celery, garlic, and herb tastes with broccoli florets.  A serving is about 150 calories with 8 grams of protein and 7 grams of fiber.
