Minestrone Soup Minestrone Soup! Fresh, flavorful and a favorite of many of our Soup Group.  Includes zucchini, tomato, kidney beans, fresh basil, and ditalini pasta, Less than 150 calories per serving.

Tabouleh Fresh Tabbouleh!  We love this cleansing parsley salad, and hope you do too.  It takes a lot of work to pick off the little leaves and finely chop, so please enjoy all the love that goes into it!  We include parsley, green onion, Roma tomato, mint, fresh lemon and a dash of bulgar.  Each serving is less the 130 calories.

   

 

Brazilian Bean Soup  Brazilian Black Bean Soup –Brazil… a bit of exotic latin flavor in a hearty, healthy soup. And, I’m told it freezes well.  This is a semi-pureed soup with a bit of garlic, cumin, coriander and laced with sherry and orange juice, and a bit of red onion and bell pepper.  It will be garnished with bacon crumbles.  Calories are 240 per serving.

Holy Kale Salad!  Kale never tasted so good!  We combine finely chopped kale with a delicious  sweet-spicy-nutty-ginger- tamari dressing. Topped with a few almonds and cranberries. You’ll want more than one serving of this healthy side!!  About 150 cals per serving.

 

Argentina Dip!  Simply delicious! Lemon, garlic, cumin, and fiber-filled chickpeas.  Includes a bit of chili, thyme, and even cinnamon!    Served with a stack of zucchini strips, it makes for a flavorful and healthy snack filled with nutrients, protein and joy.

Tuscan Eggplant Soup NEW!  Another Chef Shafer recipe!  Let’s savor it together.  Soup includes many savory flavors including roasted eggplant, mushrooms, white beans, tomato, olives and fresh basil.  yumm yumm.  Calories forthcoming, but it will be light!

German Red CabbageThis is a special 60th birthday present for a 8-yr Muscles client, enjoy the celebration!  Red cabbage and onions, cooked with some sweetness and tart spices, like vinegar, caraway, and clove.  There is some bacon fat involved… but not too much to affect your diet or digestion.  It lasts in the fridge for quite some time too.  About 150 cals/serving.

Soup Calendar: 7/15- 7/19

    

Tawdry Tortellini Soup!  Its so good, it’s sinful (yet far healthier than a restaurant version).  Of course it’s filled with love, but I’ll keep us in calorie-control with cheese-filled tortellini,  kielbasa, peas, and spinach.  Treat yourself, it’s still less than 250 cals per serving.

 Sesame Green Beans!  Can be served cold or hot, and best when eaten with your fingers. Fresh green beans, blanched and combined with a soy-dressing and sesame seeds!   Super low-calorie (less than 80 cals/serving) makes this a sin-less side dish!

     

   

Green Velvet Soup!  She ain’t pretty, but a ton more flavor than a typical pea soup.  There are many flavonoids pureed in this tasty soup, including broccoli, split pea, zucchini, spinach, celery, potato, dill, and more.  It’s a surprising favorite and you will immediately feel the nutrients activating your body.   Each serving is about 130 calories.

Spicy Sweet Potato Soup!  This is a favorite of Trent Mitchell!  And an awakening to many.  This brothy soup is quite exotic with sliced sweet potatoes, tomatoes, coriander, cumin seed, turmeric, and fresh ginger.  (Only 100 calories/serving).

Herby Chickpea Salad Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!

  
   

Carrot n Ginger Bisque!    
This is a favorite of mine!  Simple, smooth, super-comfort food!  Carrots, cream, zippy ginger, and sweetened with caramelized onion. This includes dairy, but I promise to keep it light!  A great source of beta-carotene! Only 125 calories per serving!

 

Mexican Quinoa Mexican Quinoa Salad! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn, filled-with protein from the quinoa, and a slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving
