Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.

 

Italian Collards

Italian Collards!  Inspired from my mentor Trainer, Trent!  It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more.  Contains a bit of bacon fat for that rich taste.  About 130 calories per serving.

Black Bean Dip Spicy Black Bean Dip! A creamy healthy bean dip with red onion, tomato, garlic, cumin and Jalepeno chili.  It’s a filling and healthy snack with lot’s of  fiber, protein and joy. Served with celery sticks. 

Mexican WrapThis week, try our Mexi “Burrito” Wrap.  Tasty and healthy.  Fresh roasted chicken, with a spicy low-fat black bean spread, bulgur  w/ pico d gallo, avocado, and romaine.  Wrapped in a flour tortilla.  Less than 350 cals/serving and served fresh and tasty!   Try it toasted in your broiler/toaster for 15 secs per side!

Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor!  This week’s salad includes: avocado, carrots, pecan, radish, black beans, red onion and snap peas, with a home-made Italian dressing. (less than 250 calories/container).

Natural Protein Bars!

Handy, tasty, healthy, and chemical/ preservative-free (so much better than the commercial ones that stay on the grocery shelf for a year!).  Each bar contains 16 grams of protein and only 180 calories.  This is a great snack/breakfast solution for busy day. This week flavor:  Cinnamon-Raisin or Banana-Berry

Dad’s Meaty Chili is back for Labor Day! Please send me your pre-orders by Thursday, the 1st!  We will be cookin it up and have it available for pickup at the studio by Saturday 5 pm.  on  It’s great all by itself or as a dip or topper!

This chili is not just attractive, it’s hot!  Slow-cooked and filled with sirloin, bacon, beans and incredible spicy flavors! You must be warned that it’s not for the faint of heart (although sour cream and cheese will temper the heat).  And don’t even inquire abou the about the calories, this is the antidote to low-fat, low-cholesterol, sugar-free foods.

We’ll have quart-sized containers available for pickup at the Budlong Studio as soon as 5 pm Saturday, the 31st.

Mulligatawny Soup Mulligatawny Soup! This is an Indian-based recipe and a favorite of many! Ingredients include chick peas, brown rice, apple, grated carrot, celery, green pepper, spinach, gluten, and Indian spices. Includes chicken broth and dairy. About 200 cals/serving.

 

Curry Chickpea Salad Curried Chickpea Salad! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and impacts of diabetes. It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, and spices.  About 180 calories per serving.
 

   

 

Kale n Bean Soup! This is a perfect balanced soup, that will fill your soul for breakfast as well as the other meals.  Deep balanced flavors of squash, kale, fire roasted tomatoes, pinto beans, leeks, and seasoned with fresh rosemary, thyme and the heat of Serrano chili

 

Peach Barley Peach & Walnut Barley. This is a fresh peach keen salad that gets a welcome crunch from walnuts and the fiber-filled barley  Includes extra flavor from parsley, red pepper, citrus and chili powder.  No Feta this time. About 150 cals/serving.

Awesome Asian Soup Awesome Asian Soup!  Asian flavors…a little hot, a little sour. Flavors include: tofu, ginger, garlic, mushrooms, bok choy, bamboo shoots, red bell pepper, water chestnuts, and cilantro.  This soup is great for calorie-consciousness people at only 90 calories per serving.

Mediterranean Lenil Salad Mediterranean Lentil Salad! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and tons of spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.

   

 

Corn Potato Chowder Corn & Potato Chowder! This chowder needs NO meat;  just potato, corn, onions, LOT’S of bell pepper, parsley and perfect seasonings.  It has a touch of heat and eastern seaboard seasonings.  This soup includes limited dairy. It’s well worth the 250 calories/serving.

Fresh Tomato-Basil Soup – NEW! So exciting and fresh!   We use fresh tomatoes to blend an incredible tomato bisque, complete with onion, carrot, roasted pepper, potato, garlic and chicken stock and a bit of cream.  Then we top it with a few spoonfuls of rice and freshly diced basil.  Good warm or cold.  Let me know what you think!

Three Bean Plus Salad Three Plus Bean Salad!  Our bean salad includes green beans, kidney beans, garbanzo beans, white and green onion, and bell pepper, in a sweet n tart dressing. Would be an excellent stand-alone side or a great topper for your green salad!  About 150 calories per serving.

    

 

Barley Veggie Soup Barley-Veggie Soup!  You’ll feel so good after enjoying this soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too.  Lots of veggies, lots of flavor; its that simply delicious. About 160 calories/serving..
