Tortillini Soup   Tawdry Tortellini Soup!  It’s so good, it’s sinful (yet far healthier than a restaurant version).  Of course it’s filled with love, but I’ll keep us in calorie-control with cheese-filled tortellini,  kielbasa, peas, and spinach.  Treat yourself, it’s still less than 250 cals per serving.

 

 

Kale Slaw Rainbow Raw Kale Slaw!   This raw slaw explodes with nutritious and offers lots of taste too. Kale, a little cabbage,  onion, sun-dried tomato, cranberries (optional), and sunflower seeds. All mixed in a sweet/tart dressing.  Less than 140 cals/serving

Mushroom- Spinach Soup  Mushroom & Spinach Soup – A favorite of Suzanne!  This soup ain’t pretty, but sure is flavorful and rich-tasting!  It’s pureed but still chunky with all sorts of mushrooms (boosts your immunities and lowers cholesterol) and leeks,  onions, and then laced with spinach. Flavors include garlic, sherry, fennel, and a dash of red pepper flakes. (about 100 calories per serving).

 

Smokey Black Bean n Squash  NEW!!   Spicy, nutritious, fresh.  We combine, roasted butternut squash (in season), with walnuts, black beans, just a splash of Feta cheese (can request no cheese by Saturday) combined with an adobe/honey dressing.  YUM!  About 200 cals/serving due to the high density nutrients/fiber.

 

Lentil Soup Lovely Lentil Soup! Not yet a fan of the lentil bean?  Trust me, you’ll like this. gluten-free, yet filling and fantastic; just not blinged out like those other trendy soups.  It has all the veggies you want and plenty of flavor (no curry).  Our generous serving is about 180 calories.

Roasted Squash Roasted Squash w/ Pecan Soup! Pureed roasted butternut squash,  onions and pecans blended perfectly!  Includes a dash of cream to make is smooth and soothing. About 150 cals/ serving. 

 

Herby Chickpea Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!

      

  Tomatillo Soup Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, Pepitos, and many flavors to provide a flavorful tart Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.

 

 

Tomato Cucumber Tomato Cucumber Salad!  This is one of my favorites for FRESH and FLAVORFUL!  Similar to a Capri Salad without the diary.  This delight includes grape tomatoes,  cucumber, red onion, chopped basil and parsley, marinated in a sweet n tart vinaigrette and a peppercini topper.  Less than 100 cals/serving.
