 Mulligatawny Soup! Mulligatawny This is an Indian-based recipe and a favorite of many! Ingredients include chick peas, brown rice, apple, grated carrot, celery, green pepper, spinach, and Indian spices. Includes very  limited dairy. About 200 cals/serving.

 

Herby Chickpeas Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy!  Chickpeas  are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!

  

Corn Chowder Corn & Jalepeno Chowder! This chowder needs NO meat; just corn, potato, green onions, jalepeno peppers (seeded), cilantro and perfect seasonings.  A perfect blend of  heat and creaminess. This soup includes limited dairy. It’s well worth the 250 calories/serving.

  Calico Veggie Veggie Calico Salad!  This is a raw zucchini salad with black beans, corn, bell pepper, green onions and a little avocado.  All coated with a zippy limey dressing. Colorful and good for you! About 100 calories per serving due to the healthy fats in the avocado!.

Roasted Garlic Hummus Roasted Garlic Hummus!  Home-made and delicious! Lemon, garlic, cumin, and roasted garlic!  Enough to ward off vampires!. Served with a stack of zucchini, it makes for a flavorful and healthy snack filled with fiber, protein and joy.
