Greek Lemon Soup Greek Lemon Soup!    It’s got that greek thing going on… lots of lemon in a chicken broth base.  We will add some orzo, chick-peas, veggies and egg yolk (for richness).  A favorite of many soupers! Only 125 calories per serving!.

Mexican Quinoa   Mexican Quinoa Salad! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn, filled-with protein from the quinoa, and a slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving .

   Tomatillo Soup Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving. Copper Pennies Copper Pennies!  This is a personal family recipe from our mid-west family.  Coin-diced carrots, with onion and pepper, then pickled in a savory-secret blend.  Thank you Grandma!  These gems keep for a long time, so you can store and enjoy for more than a week.  Simply Veggie Soup!  I suggest ordering by the quart, because it’s that yummy and a great solution for breakfast, a snack, or lunch/dinner.  Only about 95 calories per serving!  Yet, it’s filled with flavors from onions, carrots, celery, roasted sweet potato & butternut squash, rutabaga, leeks, greens, corns, tomatoes, etc.

Barley n Greens Soup! Barly n GreensThis is my favorite soup.  I literally lick the bowl with this herby, lemony, textury, nutritious, low-calorie soup.  Trust me, you’ll like it!  Oh, you want to know what’s in it, rather than just follow my suggestion? Ok, it has spinach, kale, chard, and barley, flavored with green onion, dill, mint, fennel fronds and lemon, in a vegetable broth.  We include a Feta cheese topper.   Can be customized with NO FETA TOPPER if requested by Saturday.  Only 140 calories/serving.

Curried Chick Peas  Curried Chickpea Side! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weght loss and impacts of diabetes, It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, zucchini, and spices.  About 180 calories per serving. Can be served hot or cold.

Tomato Basil Busque Fresh Tomato n Basil Bisque!  We use fresh tomatoes to blend an incredible tomato bisque, complete with onion, carrot, garlic and a bit of cream.  Then we top it with a few spoonfuls of rice and freshly diced basil.  Good warm or cold.  Let me know what you think!.
