Barley n Greens Soup! This is my favorite soup.  I literally lick the bowl with this herby, lemony, textury, nutritious, low-calorie soup.  Trust me, you’ll like it too!  It has spinach, kale, chard, and barley, flavored with green onion, dill, mint, fennel fronds and lemon, in a vegetable broth.  We include a Feta cheese topper.   Can be customized with NO FETA TOPPER if requested by Saturday.  Only 140 calories/serving.

   
  Lemony Lentil Side! Lentils are special!  Packed with fiber, protein and very sustainable!  Let’s celebrate them with this refreshing salad, including tri-color bell peppers, green onions, lemon, tarragon, Dijon mustard, and seasonings. It’s going to fill your mouth with freshness! (about 190 calories).

Roasted Cauliflower n Fennel Soup! This smooth, soothing soup will not only warm your taste buds, it will cure your gastro ailments.  Fennel provides an excellent source of potassium, vitamin C, and fiber. In addition, herbalists refer to fennel as an intestinal antispasmodic that relieves intestinal spasms or cramps. This is a vegan, low-calorie, delicious meal!  About 160 cals per serving.

Dilly Bulgur Side!  So fresh and filling.  We start with coarse bulgar and garbanzos, then add cherry tomatoes, cucumber, sun-dried tomatoes, roasted red pepper, lots of dill, and a balsamic dressing.  It’s calorie-dense but filled with fiber! (about 250 cals/serving

Fresco Gazpacho! This is a perfect pre-summer meal!  So fresh with cucumber, celery, tomato, parsley, pepper and a fresh spicy kick! Can be served cold or warm. Some accents of  avocado provided in soup while supplies last!  Did I mention this is the perfect low-calorie meal?   Our generous serving is only 90 calories.TIP: pour some of this in your big-mouthed water bottle and enjoy while you cycle or workout!  Many of my clients use this as their energy drink!!

   
Apricot Bulgur   Bulgar Pilaf w/ Apricots!  Can be eaten cold or warm, this savory pilaf has plenty of almonds, apricot/ cranberries, onion, parsley and flavored with allspice, cinnamon, etc.  (about 180 calories and filled with whole grains and fiber).

Broccoli Floret Soup!  Broccoli Soup Did you know that broccoli is a great source of calcium and protein?    This soup is creamy without any dairy.  The surprise is the broccoli remains in florets instead of being pureed.  It has greens, celery, garlic, and herbs, with broccoli florets.  A serving is about 150 calories with 8 grams of protein and 7 grams of fiber.

   
Roasted Beets   Roasted Beet Salad with Dill  This a lovely side dish that can be served cold or warm.  We supply a tart dressing super-flavored with dill and mix it with beautiful deep red beets, sweet onion and a sprinkle of toasted walnuts. Great alone or on a bed of greens.   About 130 calories per serving.

Chicken Tortilla Soup California Tortilla Soup!  Potato Leek Potato-Leek Soup Soup!  So soothing, creamy and tasty … without any dairy.  We roast potatoes w/ skin and garlic, combine it with sauteed leeks.  Then we season it with parsley, thyme and marjoram. And finally, give it some texture with a bit of corn.   Calories are estimated at about 180.

Calico Veggies   Veggie Calico Salad!  This is a raw zucchini salad with black beans, corn, bell pepper, green onions and a little avocado.  All coated with a zippy limey dressing. Colorful and good for you! About 100 calories per serving due to the healthy fats in the avocado!
