Cool Gaspacho!!  GaspachoThis is a perfect hot-weather meal!  So fresh with cucumber, celery, tomato, parsley, pepper and a fresh spicy kick! Can be served cold or warm. Some accents of  avocado provided in soup while supplies last! Did I mention this is the perfect low-calorie meal?   Our generous serving is only 90 calories.TIP: pour some of this in your big-mouthed water bottle and enjoy while you cycle or workout!  Many of my clients use this as their energy drink!!

Lemony Lentils Lemony Lentil Side! Lentils are special!  Packed with fiber, protein and very sustainable!  Let’s celebrate them with this refreshing salad, including tri-color bell peppers, green onions, lemon, tarragon, Dijon mustard, and seasonings. It’s going to fill your mouth with freshness! (about 190 calories).

Tomato Bisque
Tomato n Basil Bisque!  We use fresh tomatoes to blend an incredible tomato bisque, complete with onion, carrot, garlic and a bit of cream.  Then we top it with a few spoonfuls of freshly diced basil.  Good warm or cold.  Let me know what you think!.

Greek Orzo Side! NEW!!!   This is going to be sooooooo good!  All things fresh, flavorful and filling!   It’s an orzo (grain base), then filled with artichoke hearts, chickpeas, lemon, oregano, olives, feta, parsley, red onion, red pepper (or tomato) and cucumber. Don’t be scared at the 200 calories, just savor and realize its a meal!

Chipolte SoupPinto Bean n Chipolte Soup! Inspired by Chef Shafer, this spicy flavor-filled soup will tickle your taste buds.  We will blend pinto beans with corn, dice tomatoes, red pepper, onion, and zucchini in a broth flavored with cilantro, green onion, and chipolte.  It is that good!  About 180 cals per serving.

 

Quinoa Salad Quinoa Salad!  Quinoa has a wonderfully nutty light taste. It is actually a seed.  In fact its the only plant-based protein that provides all essential amino acids.  We are going to combine this gem with parsley, mint, green onions, almonds, and currants and splash it with a zesty lime dressing.  It’s gonna be good!

Tomatillo Soup!! This is a vegan version of a traditional PTomatillo Souposole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.
