Vegetarian Chili Vegetarian Chili! Many many flavors, some are even a secret, but the result is a hint of sweet-then-spicy!  Ingredients include mushrooms, beans, diced tomatoes, bell pepper, celery, corn, cilantro, chipolte peppers, and sun-dried tomatoes.  And, its only 180 calories/serving with tons of fiber!

Rainbow Kale SlaKale Slaww! Kale never tasted so good!  We combine finely chopped kale and cabbage with a delicious sweet-spicy-sunflower-basalmic dressing. Topped with a few cranberries, toasted almonds and sesame seeds. It’s raw, healthy and delicious!  About 120 cals per serving.

potato leekPotato Leek Soup! So soothing, creamy and tasty … without any dairy.  We roast potatoes w/ skin and garlic, combine it with sauteed leeks.  Then we season it with parsley, thyme and marjoram. And finally, give it some texture with a bit of corn.   Calories are estimated at about 180.

Roasted Cauliflower Side – NEW!!   Let’s start with oven roasted cauliflower, then tossed with chickpeas and couscous and seasoned with almonds, dill, parsley, in a seasoned cumin yogourt dressing.  About 200 cals per our serving.

French Onion Soup Healthy French Onion Soup – NEW!!  An amazing classic onion soup with a rich beef broth with sherry, but no fatty cheese.  Will provide crouton topper Super fresh and light for this time of heat. Can be served cold or hot.  Only 100 calories and filled with flavor… let’s try it!

Greek Orzo Side! Everyone loved this, so give it a try!  All things fresh, flavorful and filling!   It’s an orzo (grain base), then filled with artichoke hearts, chickpeas, lemon, oregano, olives, feta, parsley, red onion, red pepper (or tomato) and cucumber. Don’t be scared at the 200 calories, just savor and realize its a meal!

Creamy Mexican Corn Soup NEW!!  I was struggling with a soup menu given this heat wave.   After contemplating a chilled soup, I came up with this new recipe!  I think it will be terrific, so let’s try it together!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Cucumber Salad Marinated Cucumber Side NEW!!.  Simple, refreshing, and will last for a long time (but I bet you gobble it up before that).  This is something my Grandma served up during most Sunday suppers.  Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing.  They’ll get marinated and a bit pickled and oh so tasty.  Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!
