Barley n Greens Soup Barley n Greens Soup! This is my favorite soup.  I literally lick the bowl with this herby, lemony, textury, nutritious, low-calorie soup.  Trust me, you’ll like it too!  It has spinach, kale, chard, and barley, flavored with green onion, dill, mint, fennel fronds and lemon, in a vegetable broth.  We include a Feta cheese topper.   Can be customized with NO FETA TOPPER if requested by Saturday.  Only 140 calories/serving.

Lemony Lentils Lemony Lentils!  Lentils are special!  Packed with fiber, protein and very sustainable!  Let’s celebrate them with this refreshing salad, including tri-color bell peppers, green onions, lemon, tarragon, Dijon mustard, and seasonings. It’s going to fill your mouth with freshness n flavor! (about 190 calories).
 

 

 

 
Brazilian Black Bean Soup!  Brazil: warm but mild with a bit of exotic latin flavor in a hearty, healthy soup. And, I’m told it freezes well. This is a semi-pureed soup with a bit of garlic, cumin, coriander and laced with sherry and orange juice, and a bit of red onion and bell pepper. Calories are 200 per serving.

 

Bean Sprouts  Korean Bean Sprout Side!  Very low calorie (less than 70 calories) and tasty with a light Asian flavor. Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

Spicy Sweet Potato Soup!  Spicy Sweet Potato Soup A very different taste with so many healing spices!  This brothy soup is quite exotic with sliced sweet potatoes, tomatoes, coriander, cumin seed, turmeric, and fresh ginger.  (Only 100 calories/serving).

Karmic Carrot Karmic Carrot Salad! Thinly sliced blanched carrots is the magic in this side dish.  Add some almonds, cranberries, honey, and some savory spices, including cinnamon, garlic, parsley, and cumin, and you may transform metaphysically! Each serving is less the 100 calories.
 

 

 

 

Toasted Rice
Toasted Rice Soup!  Amazing taste with toasted brown rice, spinach, onions, lemon zest, and a hint of nutmeg in a vegetable broth.  I’ll include some Parmesan cheese as a separate topper to make this a SOUPer delight!   (200 calories/serving, inc the cheese).

 

 

Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my Grandma served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty. Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Simply Veggie Soup!  I suggest ordering by the quart, because it’s that yummy and a great solution for breakfast, a snack, or lunch/dinner.  Only about 95 calories per serving!  Yet, it’s filled with flavors from onions, carrots, celery, leeks, roasted sweet potato & butternut squash, rutabaga, onion, greens, corn, tomatoes, etc.

Tomatillo Soup!!  This Tomatillo Soup is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top.

Roasted Beets Roasted Beet Salad with Dill  This a lovely side dish that can be served cold or warm.  We supply a tart dressing super-flavored with dill and mix it with beautiful deep red beets, sweet onion and a sprinkle of toasted walnuts. Great alone or on a bed of greens.   About 130 calories per serving.
