Vegetarian Chili! A picture cannot do it justice… its about the aroma and blended flavors…many many flavors, some are even a secret.  But the result is a hint of sweet-then-spicy!  Ingredients include mushrooms, beans, diced tomatoes, bell pepper, celery, cilantro, chipolte peppers, and sun-dried tomatoes.  And, its only 180 calories/serving with tons of fiber!

Mexican Quinoa Mexican Quinoa! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn and roasted red peppers, filled-with protein from the quinoa, and a very slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving.

 

Greek lemon Soup Greek Lemon Soup!    It’s got that greek thing going on… lots of lemon in a chicken broth base.  We will add some orzo, veggies and egg yolk (for richness).  A favorite of many soupers! Only 125 calories per serving!


 Korean Bean SproutsKorean Bean Sprout Side!  Very low calorie (less than 70 calories) and tasty with a light Asian flavor. Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

Red Pepper Hummus Red Pepper Dip w/ Celery Stix!  Home-made and delicious! Lemon, garlic, cumin, and roasted red pepper with blended chickpeas! Served with a stack of cucumbers, it makes for a flavorful and healthy snack filled with fiber, protein and joy

(less than 220 calories/container).  ADD fresh roasted chicken to your salad for only $1.50 if requested by Saturday!

  This is a perfect balanced soup, that will fill your soul for breakfast as well as the other meals.  Deep balanced flavors of  spinach, kale, fire roasted tomatoes, white beans, and seasoned with fresh rosemary, thyme and just a bit of heat of Serrano chili.  All in about 180 cals/serving


Mediterranean LentilsMediterranean Lentils! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and tons of spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.

 

Carrot Ginger Bisque Carrot n Ginger Bisque! This is a favorite of mine! Simple, smooth, and delicious! Carrots, cream, zippy ginger, and sweetened with caramelized onion. This includes dairy, but I promise to keep it light!  A great source of beta-carotene and better than ice cream!.  Only 125 calories per serving!.

Tomato Cucumbers   Tomato Cucumber Bliss!  This is one of my favorites for FRESH and FLAVORFUL!  Similar to a Capri Salad without the diary.  This delight includes tomatoes,  cucumber, red onion, chopped basil and parsley, marinated in a sweet n tart vinaigrette and a peppercini topper.  Less than 100 cals/serving.

Spicy Sweet Potato SoupSpicy Sweet Potato Soup!  A very different taste with so many healing spices!  This brothy soup is quite exotic with sliced sweet potatoes, tomatoes, coriander, cumin seed, turmeric, and fresh ginger.  (Only 100 calories/serving).

Copper Pennies Copper Pennies!  This is a personal family recipe from our mid-west family.  Coin-diced carrots, with onion and pepper, then pickled in a savory-secret blend. Thank you Grandma!  These gems keep for a long time, so you can store and enjoy for more than a week. Brocolli Floret Soup Broccoli Floret Soup!  Did you know that broccoli is a great source of calcium and protein?    This soup is creamy without any dairy.  The surprise is the broccoli remains in florets instead of being pureed.  It has greens, celery, garlic, and herb tastes with broccoli florets.  A serving is about 150 calories with 8 grams of protein and 7 grams of fiber.
