Mushroom Spinach SoupMushroom & Spinach Soup! This soup isn’t featured very often so enjoy it while you can! It is sure is flavorful and rich-tasting!  It’s pureed but still chunky with all sorts of mushrooms (boosts your immunities and lowers cholesterol) and leeks,  onions, and then laced with spinach. Flavors include garlic, sherry, fennel, and a dash of red pepper flakes. (about 100 calories per serving)

Bulgar w_ Apricots Bulgar w/ Apricot Pilaf!  Can be eaten cold or warm, this savory pilaf has plenty of almonds, apricot, cranberries, onion, parsley and flavored with allspice, cinnamon, etc.  (about 180 calories and filled with whole grains and fiber).

 

Velvet Green Green Velvet Soup! She ain’t pretty, but a ton more flavor than a typical pea soup.  There are many flavonoids pureed in this tasty soup, including broccoli, split pea, zucchini, spinach, celery, potato, dill, and more.  It’s a surprising favorite and you will immediately feel the nutrients activaed your body.   Each serving is about 130 calories
Sesame Green Beans Sesame Green Beans!  Can be served cold or hot, and best when eaten with your fingers. Fresh green beans, blanched and combined with a soy-dressing and sesame seeds!   Super low-calorie (less than 80 cals/serving) makes this a sin-less side dish.

Black Bean Dip  Spicy Black Bean Dip! A creamy healthy bean dip with red onion, tomato, garlic, cumin and chili peppers. It’s a filling and healthy snack with lot’s of  fiber, protein and joy. Served with celery sticks.

This week flavors, as available:  Peanut Toffee or Cinnamon Raisin.

Turkey Barley Soup Healthy Turkey Soup NEW!!!  This is a better way to enjoy the festivities.   Let me do the work to cook down that lovely turkey into a blissful and healthy soup.  Home-made stock with yummy veggies, barley and turkey tid-bits.  It will feel like home, I promise!  Our generous serving is about 190 calories.

fall harvast side Fall Harvest Side!  We are bringing back this full flavored side dish for your seasonal enjoyment!  We bring together the flavors of roasted sweet potatoes, walnuts, celery, apples, raisins, and parsley with a flavorful citrus/ginger dressing. Packed with fiber and nutrients, about 190 cals/serving.

 

 

Tomatillo Soup Tomatillo Soup!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top.

Lentil Soup Lovely Lentil Soup!  Not yet a fan of the lentil bean? Trust me, you’ll like this. Gluten-free, yet filling and fantastic; just not blinged out like those other trendy soups.  It has all the veggies you want and plenty of flavor (no curry).  Our generous serving is about 180 calories.

Apple Pilaf Apple Pilaf!   Earthy leeks, nutty almond, apples, and a rice/barley blend make this sweet pilaf a standout. We’ll keep the serving size to about a cup so that the calories stay below 200.

Mexican Chowder Mexican Corn Chowder!  You know you want it.  Warm tastes of jalepeno and cilantro with the comfort of corn chowder.  This was posted by Chef Shafer so you can trust it.  Has dairy (and corn) in it.  Yum at 240 calories.

Thai Cucumber Thai Cucumbers!  Spicy, refreshing and will leave you wanting more!  Sliced cucumbers, red onion, mint, and cilantro, with a spicy dressing, Topped with sesame seeds. Only about 60 cals/ serving
