Barley Vegetable Soup Barley-Veggie Soup!  You’ll feel so good after enjoying this soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too.  Lots of veggies, lots of flavor; it’s that simply delicious. About 160 calories/serving.

Italian Collards Italian Collards!  Best served warm. It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more. Contains a bit of bacon fat for that rich taste.  VEGAN version available if requested by Saturday. About 130 calories per serving.

Creamy Squash n Pecan Soup Roasted Squash w/ Pecan Soup! Pureed roasted butternut squash,  onions and pecans in a perfect blend!  This will almost taste like desert from the all-natural carmelized veggies! Includes a dash of cream to make it smooth and soothing. About 170 cals/ serving.

Marinated Cucumbers Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my Grandma served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty.  And, the the calories are less than 80 cals a serving, so it hardly counts!
