  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top.
