Tomatillo SoupTomatillo Soup!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top.

 
 
 
 
 
 
Calico Veggies Calico Veggies!  This is a super fresh and raw delight, including zucchini, black beans, corn, fresh bell pepper, green onions, cilantro, a little avocado, and a zippy dressing. Colorful and good for you!
