Potato Salad Soup

Potato Salad Soup!
This is a favorite Polish tradition and a excellent meal choice to offset the holidays!  Creamy, and surprisingly balanced (if it get it right!).   It’s Terri’s favorite! Includes onion, potatoes, carrots, sour cream, and dill pickles w/juice.  Yum at 240 calories.

 

 

 

 

 
 Kkarmic carrotsarmic Carrots! Thinly sliced blanched carrots is the magic in this side dish.  Add some orange sweetness and savory spices, with some dried cranberries and toasted almonds; you might transform metaphysically! Each serving is less the 100 calories.

Southwest Soup  Southwest Soup!  A vegetarian southwest soup with surprising flavors:    jalapeno, bell pepper, corn, black beans, and onion, with a squash soup base.  Many say its super! (about 200 cals/serving, but provides tons of fiber and plant protein)

 
 
 
 
 
 
Quinoa with Nuts n Berries! Perfect blend of taste with super nutrition!  Quinoa is the only plant protein source that contains all essential amino acids!  Perfect for the vegan and their friends! Quinoa is not a grain; it’s a seed from the chard family.  This side includes fresh scallions, parsley and mint, with toasted almonds, and fresh pomegranate, blended in a zesty lime dressing.
