Mexican Creamy Corn Soup!  We start with a creamy corn puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving..

Copper Pennies!  This is a personal family recipe from our mid-west family.  Coin-diced carrots, with onion and pepper, then pickled in a savory-secret blend. Thank you Grandma!  These gems keep for a long time, so you can store and enjoy for more than a week. Less than 100 calories/serving.
“KFC” Slaw -It was such a big hit, I’ll make a second batch! Tastes just like the expensive stuff, but made by your personal chef (and more than twice the serving size!). This slaw contains dairy so don’t let it sit in the fridge too long, but I bet it will be gobbled up fast! About 300 calories per container.

Red Pepper Hummus n stix! Home-made and delicious! Lemon, garlic, cumin, and roasted red pepper with blended chickpeas! Served with a stack of veggies; it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Tomatillo Soup!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top.

Pickled Beets!!  Fresh from the Farmer’s Market to my pickling jar! They’ll be zippy and will give you super powers (and colorful output too!) They are full of antioxidants, are anti-inflammatory, protect the liver, and promote cardiovascular health!. About 120 calories per serving.
