Tawdry Tortellini Soup! It’s so good, it’s sinful (yet far healthier than a restaurant version). Of course it’s filled with love, but I’ll keep us in calorie-control with cheese-filled tortellini, kielbasa, peas, tomatoes, fennel, and spinach. Treat yourself, it’s still less than 250 cals per serving

Calico Veggies! This is a super fresh and flavorful delight, including zucchini, black beans, corn, green onions, cilantro, a little avocado (at the bottom), with a zippy dressing. Colorful and good for you! About 90 calories per serving due to the healthy fats in the avocado!
Pickled Beets!!  Fresh from the Farmer’s Market to my pickling jar! They’ll be zippy and will give you super powers (and colorful output too!) They are full of antioxidants, are anti-inflammatory, protect the liver, and promote cardiovascular health!. About 120 calories per serving.

Simply Veggie Soup!  This is a wonderful idea for breakfast, lunch, and dinner! Only about 95 calories per serving! Yet, it’s filled with flavors from onions, leeks, carrots, celery, roasted sweet potato & butternut squash, greens, corn, tomatoes, etc. About 120 cals/serving!

Greek Lemon Soup!   It’s got that greek thing going on… a bright summer flavor with a lemony egg sauce. We will add some orzo, carrots, celery, onion and spinach. A favorite of many soupers! Only 125 calories per serving!
Quinoa Pilaf!  Kinda sweet, nutty and tart, with nuts, dried cranberry, green onion, basil, parsley, with an orangy vinaigrette dressing. Perfect for this time of year and certainly worth trying! It’s about 150 calories and contains plenty of protein from the quinoa.

Chicken n Lime Soup! A new version of our California Tortilla Soup. This flavorful brothy soup includes, celery, onion, diced tomato, and lime/cilantro to give you the perfect taste-bud experience without the calories! We include home-cooked chicken, and a bit of avocado. About 120 cals/serving!

Smokey Black Bean n Squash!   Sweet n spicy, nutritious, fresh. We combine, roasted butternut squash, with walnuts, black beans, just a splash of Feta cheese (can request vegan option) combined with an adobe/honey dressing.  YUM!  About 200 cals/serving due to the high density nutrients/fiber.

Spicy Sweet Potato Soup!  A very different taste with so many healing spices! This brothy soup is quite exotic with sliced sweet potatoes, tomatoes, coriander, cumin seed, turmeric, thai chilis, and fresh ginger. (Only 100 calories/serving). heated if you prefer!  About 170 cals/serving.

Mediterranean Lentils! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and curried spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.
Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my family served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty. And, the the calories are less than 80 cals a serving, so it hardly counts!
