Hot n Sour Soup!  Asian flavors…a little hot, a little sour. Flavors include: ginger, garlic, mushrooms, bok choy, bamboo shoots, red bell pepper, water chestnuts, and cilantro. This soup is great for calorie-consciousness people at only 90 calories per serving

Mexican Quinoa! I love this deli-side – it’s light, zippy, and filled with good proteins! It’s naturally sweet from the corn and red bell peppers, filled-with protein from the quinoa, and a very slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds. SERVING SUGGESTION: make your own wrap or add to your enchilada filling!
Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my family served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty. And, the the calories are less than 80 cals a serving, so it hardly counts! SUGGESTION: Add to your sushi meal as an appetizer or just nibble instead of chips!

Smokey Pinto Bean Soup! Inspired by Chef Shafer! This mild-spicy, flavor-filled soup will tickle your taste buds. We will blend pinto beans, bell pepper, onion, and zucchini in a broth flavored with cilantro, and smokey chipolte. It really is sooo good! About 180 cals per serving.
Zesty Italian Sausage n Veggie Soup!  It’s got an Italian zip, with more! Full of flavor with lean sausage, zucchini, spinach, kidney beans, etc. Kinda like a soup version of a pizza without the cheese or extra calories!

Sesame Green Beans! Can be served cold or hot, and best when eaten with your fingers. Fresh green beans, blanched and combined with a soy-dressing and sesame seeds! Super low-calorie (less than 80 cals/serving) makes this a sin-less side dish.

Cool Gazpacho! This is a perfect summer meal! So fresh with cucumber, celery, tomato, parsley, pepper and a fresh spicy kick! Can be served cold or warm. A slice of avocado is provided while supplies last! Did I mention this is the perfect low-calorie meal?  Only 90 cals per serving. TIP: pour some of this in your big-mouthed water bottle and enjoy while you cycle or workout! Many of my clients use this as their energy drink!
Potato Leek Soup! So soothing, creamy and tasty! We roast potatoes w/ skin and garlic, combine it with sauteed leeks, and a bit of corn. Then we season it with parsley, thyme and marjoram. Calories are about 180 per serving.

Dilly Garbanzos! So fresh and filling. We start with coarse bulgar and garbanzos, then add fresh cucumber, sun-dried tomatoes, zucchini, lots of dill, and a balsamic dressing. About 200 cals/serving.
