Vegetarian Chili! A picture cannot do it justice… its about the aroma and blended flavors…many many flavors, some are even a secret.  But the result is a hint of sweet-then-spicy!  Ingredients include butternut squash, mushrooms, beans, diced tomatoes, onions, celery, peppers, cilantro, and sun-dried tomatoes.  And, its only 180 calories/serving with tons of fiber!

Greek Orzo Side! All things fresh, flavorful and filling!  It’s an orzo (grain base), then filled with artichoke hearts, chickpeas, lemon, oregano, olives, parsley, red onion, red pepper and cucumber. Don’t be scared at the 200 calories, just savor and realize its a meal!
Italian Collards!  Best served warm. It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more.  About 130 calories per serving.

Simply Veggie Soup!  This is a wonderful idea for breakfast, lunch, and dinner! Only about 95 calories per serving! Yet, it’s filled with flavors from onions, leeks, carrots, celery, roasted sweet potato & butternut squash, greens, corn, tomatoes, etc. About 120 cals/serving!

Herby Parmesan Chickpeas!  So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese. Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition. Don’t be scared at the 250 calories, just savor and realize its a meal!

Greek Lemon Soup!   It’s got that greek thing going on… a warm sunny flavor with a lemony egg sauce. We will add some orzo, carrots, celery, onion and spinach. A favorite of many soupers! Only 125 calories per serving!
Sweet Potato Chocolate Mole Soup NEW!!  Let’s try this together! Full-bodied and flavorful pureed soup that will be great as is, or……. try adding chicken, or topping with grated cojita cheese, avocado, or sourcream, or even as sauce for your rice dishes, fish fillets, or enchiladas, etc. The options are endless! This pureed soup SHOULD be spicy, but not TOO hot with a hint of chocolate! Calories are 180 per serving.

Mediterranean Lentils! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and curried spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.
