Brazilian Black Bean Soup Brazil : warm but mild with a bit of exotic latin flavor in a hearty, healthy soup.  I’m told it freezes well. This is a semi-pureed soup with a bit of garlic, cumin, carrots, coriander and laced with sherry and orange juice, and a bit of bacon crumbles (can request vegan)! Calories are 200 per serving.

Zesty Bean n Artichoke Salad!  This bean salad includes artichokes, red n white kidney beans, garbanzo beans, white n green onion, tomato n bell pepper, in an Italian marinade dressing. Would be an excellent stand-alone side or a great topper for your green salad! About 150 calories per serving.

Roasted Veggies!  Veggies can be boring, so we have amped up this side dish for your tastebuds and your nutrition. Roasted (means caramelized)  cauliflower, brussel sprouts, sweet potato, squash, and onion tossed together and seasoned to be yummy!  Suggest serving warm, but it will be good anyway you eat it!

Breadless Bruschetta! This doesn’t come around too often, so seize the moment. Our fresh bruschetta is made with diced tomatoes in garlic, olive oil, basil, suns-dried tomatoes and capers! Of course, we won’t tell if you spread it on a baguette with mozzarella cheese. Polish Potato Soup! This is a favorite Polish tradition and a excellent meal choice to fill your tastebuds!  Creamy, dilly and surprisingly balanced (if it get it right!).   It’s Terri’s favorite! Includes onion, potatoes, carrots, sour cream, and dill pickles.  Yum at 240 calories.

Curried Veggie Soup!  This is a curry, gingery, peanuty vegetable soup, with carrots, black beans, bell pepper, and spinach. I think it’s one of my favorite soups. So much fiber, flavor and nutrients! (150 calories/serving).
Asian Slaw!  It’s raw, with a flavorful sesame dressing. Cabbage is mixed with green onion, toasted almonds, orangey cranberries, toasted sesame seeds, bell peppers, and cilantro. A nice low-calorie side or snack at 90 calories per serving.

Roasted Garlic Hummus  w/ Stix!  Hand-crafted never tasted better.  Lemon, garlic, cumin, a ton of healing roasted garlic blended in our famous hummus  Served with a stack of veggies, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Bean n Spicy Sausage Soup!   Very authentic to New Orleans; warm flavors of chicken sausages, mild chilies, beans, hominy, kale, carrots, celery and a mouthful of flavors! Yum at 240 calories!

Cuban Black Beans! A delicious side with lots of fiber, flavor and protein. Black beans and corn, with pineapple, peppers, green and red onion, and lots of sweet n spicy flavors! A great stand alone or salad topper! About 150 calories for our big serving.

Thai Coconut Soup!  Per Donna’s request, we are offering Tom Kha Gai (without the chicken), a rich creamy yet tangy Thia soup that is bursting with flavor! Includes tons of mushroom, some heat from the Thai chilis, and many magical flavors that Thai food is famous for! Don’t ask about the calories (due to that coconut milk); just enjoy!
Mexican Corn Chowder!  You know you want it.  Warm tastes of peppers and cilantro with the comfort of corn -potato chowder.  This was posted by Chef Shafer so you can trust it.  Has dairy (and corn) in it.  Yum at 250 calories.

Curried Chickpeas! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and the impacts of diabetes. A great source of protein and fiber. This recipe is really tasty with the addition of onions, tomatoes, zucchini, and spices. About 180 calories per serving. Can be served hot or cold.
SUGGESTION: Use as a filling in a burrito, enchilida or casserole.
Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my family served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty. And, the the calories are less than 80 cals a serving, so it hardly counts!
