Broccoli Floret Soup!  Did you know that broccoli is a great source of calcium and protein?    This soup is creamy without any dairy.  The surprise is the broccoli remains in florets instead of being pureed.  A serving is about 150 calories with 8 grams of protein and 7 grams of fiber.

Pecan n Apple Chickpea Salad NEW!!!! A vegan version of the traditional chicken salad, with chickpeas apples, pecan, cranberries, parsley and a creamy tahini dressing. Calories TBD. 

Thai Cucumbers! Sweet n flavorful; it’s refreshing and will leave you wanting more! Sliced cucumbers, red onion, mint, and cilantro, with a tasty asian marinade. Topped with toasted sesame seeds. Only about 60 cals/ serving!

Lemon Lentil Soup!  This chunky lemony lentil Soup is full of the best bright and zesty flavors, it’s naturally gluten-free and vegan.. It’s a cozy Middle Eastern version of our Tomato Soup:, simmered witha simple mix of veggies, red lentils, spices and lots of lemon juice to brighten things up.
Gourmet Tomato Soup! This award-winning recipe can be served warm or cold; be brave and try it out! This smooth soup includes flavors of smokey aleppo pepper, coriander, and tarragon. It stands alone, but also perfect with a Grilled Cheese Sandwich.

Calico Veggies! This is a super fresh and flavorful delight, including zucchini, black beans, corn, green onions, cilantro, a little avocado (at the bottom), with a limey dressing. Colorful and good for you! About 90 calories per serving due to the healthy fats in the avocado!

Simply Veggie Soup!  This is a wonderful idea for breakfast, lunch, and dinner! Only about 95 calories per serving! Yet, it’s filled with flavors from onions, leeks, carrots, celery, roasted sweet potato & butternut squash, greens, corn, tomatoes, etc. About 120 cals/serving!

Herby Parmesan Chickpeas!  So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese. Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition. Don’t be scared at the 250 calories, just savor and realize its a meal!  

Tomato Cucumber Bliss! This is one of my favorites for FRESH and FLAVORFUL! Similar to a Capri Salad without the diary. This delight includes tomatoes, cucumber, red onion, chopped basil and parsley, marinated in a tart vinaigrette and a pepperchini topper. Less than 100 cals/serving.!

Spiceful Indian Bean Dip!  Made of beans, tahini, mint, cardamon, cumin, and chili seeds and served with veggie dippers. Very flavorful, with a kick and low calorie!!!. It’s a filling, healthy snack with lot’s of fiber, protein and joy.
