Carrot n Date Bisque!  Thank you Chef Shafer, for sharing this delightful treat. It’s sweet, light, tasty and creamy.  Let’s enjoy.  This will include a very small amount of dairy.

Dilly Garbanzos! So fresh and filling. We start with coarse bulgar and garbanzos, then add fresh cucumber, roasted red pepper, tomatoes, sun-dried tomatos, lots of dill, and a light balsamic dressing. About 200 cals/serving.

No-Mayo Coleslaw!   This the tart-sweet slaw you find at the best BBQ joints in the south.  There is no mayo in this dish, so it can last (and improve) for over a week!  Includes onion, a bit of carrot, and an sweetened vinegar marinade! Split Pea n Ham Soup! Another personal favorite of many! We make it all from scratch with bits of carrots and smokey ham, just like Mom made it! Did you know that split peas have the following health benefits, high fiber, lowers cholesterol, and high in potassium? About 240 cal/serving

Sweet Potato Mole Soup! This is a full-bodied and flavorful pureed soup that will be great as is, or……. try adding chicken, or topping with grated cojita cheese, avocado, or sour cream, or even as sauce for your rice dishes, fish fillets, or enchiladas, etc. The options are endless! Barley-Veggie Soup!  You’ll feel so good after enjoying this traditional soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too. Lots of veggies, lots of flavor; it’s that simply delicious. About 160 calories/serving.

Apple Slaw! This sweet-tart slaw has no dairy, but instead fills the senses with sweet-tart vinaigrette, apples, broccoli slaw, dried cherries, and walnuts. This is really delicious! About 125 cals/per serving.

Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my family served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty. And, the the calories are less than 80 cals a serving, so it hardly counts!

Lebanese Vegetable Soup! Let’s enjoy this traditional (vegetarian version) comfort-soup filled with flavors. It will not be too spicy, but will be very spice-full with hints of ginger, cinnamon, cumin, paprika, turmeric, and caraway. Includes toasted Lebanese couscous, lentils, veggies, lemon and parsley too!
