Creamy Mexican Corn Soup NEW!!  I was struggling with a soup menu given this heat wave.   After contemplating a chilled soup, I came up with this new recipe!  I think it will be terrific, so let’s try it together!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Cucumber Salad Marinated Cucumber Side NEW!!.  Simple, refreshing, and will last for a long time (but I bet you gobble it up before that).  This is something my Grandma served up during most Sunday suppers.  Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing.  They’ll get marinated and a bit pickled and oh so tasty.  Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Healing Cabbage Soup Souper-Power Cabbage Soup!   You know this if you have ever treated yourself to cabbage soup when you’ve been sick, or on a cleanse.  It has souper powers!  And how appropriate with this heat-wave and school chaos!  Let us serve you with a veggie brothy soup with cabbage, tomato, celery, onion, garlic, and herbs.  Less than 90 calories per serving!

Curried Chick Peas Curried Chickpeas! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and impacts of diabetes. It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, and curried spices.  About 180 calories per serving.

sesame hummus Sesame Hummus  NEW!!!   Home-made and delicious! Lemon, garlic, cumin, with an splash of sesame oil to intensify the flavor! Served with a stack of cucumber discs.  A very healthful and fulfilling snack or meal

PROTEIN WRAPS! This week, try our tasty and healthy  “Buffalo Wing”  Wrap! This may be our best wrap!   Roasted chicken with a bit of hotness. Then wrapped with a bit of blue cheese, red onion, celery, lettuce and couscous.  Wrapped in romaine leaves and/or tortilla.  We will include a hot dipping sauce if you need a bit more heat!  About  320-calories per serving and about 65 grams of chicken!  Can request no tortilla if received by Saturday!

Awesome Asian Soup!  awesome asian soupAsian flavors…a little hot, a little sour. Flavors include: tofu, ginger, garlic, mushrooms, bokchoy, bamboo shoots, red bell pepper, water chestnuts, and cilantro.  This soup is great for calorie-consciousness people at only 90 calories per serving.

Mexican Quinoa Salad! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn, filled-with protein from the quinoa, and a very slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving.

brazilblackbean Brazilian Black Bean Soup!  Brazil… a bit of exotic latin flavor in a hearty, healthy soup. And, I’m told it freezes well. This is a semi-pureed soup with a bit of garlic, cumin, coriander and laced with sherry and orange juice, and a bit of red onion and bell pepper. Bacon topper, unless requested otherwise by Friday.  Calories are 200 per serving.

Roasted Squash Roasted Squash w/ Pecan Soup! Pureed roasted butternut squash,  onions and pecans blended perfectly!  Includes a dash of cream to make is smooth and soothing. About 150 cals/ serving. 

 

Herby Chickpea Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!

      

  Tomatillo Soup Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, Pepitos, and many flavors to provide a flavorful tart Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.

 

 

Tomato Cucumber Tomato Cucumber Salad!  This is one of my favorites for FRESH and FLAVORFUL!  Similar to a Capri Salad without the diary.  This delight includes grape tomatoes,  cucumber, red onion, chopped basil and parsley, marinated in a sweet n tart vinaigrette and a peppercini topper.  Less than 100 cals/serving.

 

Pomegranate Hummus   Hummus w/ Pomegranate! Pomegranates are back in season for a limited time!  If you have never tried this middle-Eastern combo, ya just gotta try it!  Home-made and delicious hummus with a sprinkle of tart-sweet fresh Pomegranate!  Served with a stack of celery stix, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Beans n Kale This recipe has been handed down to me from an admired foodie.  So it has to be good!  Heck, it  has bacon in it… so no doubt!  Home-soaked white beans simmered with kale, onion, garlic, red pepper flakes, and bacon.  You get that southern feeling?  I do too!

 

 

Kenya Curried Soup!  Kenya Curried Soup Perfect blend of spices and texture .  This soup is a bit sweeter than a Dahl, and boasts flavors including tomatoes, kale, black-eyed peas, corn, bell pepper, sweet curry flavors, and coconut milk. CauliflowerFennel Soup Roasted Fennel and Cauliflower Soup! This smooth, soothing soup will not only warm your taste buds, it will cure your gastro ailments.  Fennel provides an excellent source of potassium, vitamin C, and fiber. In addition, herbalists refer to fennel as an intestinal antispasmodic that relieves intestinal spasms or cramps.  This is a vegan, low-calorie, delicious meal!  About 160 cals per serving.

Carrot Bean Salad Green Bean & Carrot Salad!

It may sound bland, but it is really really tasty and fresh!  It includes some crunch of red radishes, red onion along with freshly blanched carrots and green beans.  Our zippy marinade and toasted sesame finish off this low-calorie treat.  (80 calories/serving).

Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.

 

Italian Collards

Italian Collards!  Inspired from my mentor Trainer, Trent!  It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more.  Contains a bit of bacon fat for that rich taste.  About 130 calories per serving.

Black Bean Dip Spicy Black Bean Dip! A creamy healthy bean dip with red onion, tomato, garlic, cumin and Jalepeno chili.  It’s a filling and healthy snack with lot’s of  fiber, protein and joy. Served with celery sticks. 

Mexican WrapThis week, try our Mexi “Burrito” Wrap.  Tasty and healthy.  Fresh roasted chicken, with a spicy low-fat black bean spread, bulgur  w/ pico d gallo, avocado, and romaine.  Wrapped in a flour tortilla.  Less than 350 cals/serving and served fresh and tasty!   Try it toasted in your broiler/toaster for 15 secs per side!

 


Veg SaladVeggie  Green Salad! Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor!  This week’s salad includes: avocado, carrots, pecan, radish, black beans, red onion and snap peas, with a home-made Italian dressing. (less than 250 calories/container).

Natural Protein Bars!

Handy, tasty, healthy, and chemical/ preservative-free (so much better than the commercial ones that stay on the grocery shelf for a year!).  Each bar contains 16 grams of protein and only 180 calories.  This is a great snack/breakfast solution for busy day. DAD’S MEATY CHILI!   This chili is not attractive, it’s hot!  Slow-cooked and filled with sirloin, bacon, beans and incredible spicy hot flavors!  You must be warned that it’s not for the faint of heart!   Pre-order by Thurs, the 29th for pickup as early as Saturday, 5 pm on August 31st.  $10/quart.
