Creamy Mexican Corn Soup NEW!!  I was struggling with a soup menu given this heat wave.   After contemplating a chilled soup, I came up with this new recipe!  I think it will be terrific, so let’s try it together!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Cucumber Salad Marinated Cucumber Side NEW!!.  Simple, refreshing, and will last for a long time (but I bet you gobble it up before that).  This is something my Grandma served up during most Sunday suppers.  Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing.  They’ll get marinated and a bit pickled and oh so tasty.  Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Healing Cabbage Soup Souper-Power Cabbage Soup!   You know this if you have ever treated yourself to cabbage soup when you’ve been sick, or on a cleanse.  It has souper powers!  And how appropriate with this heat-wave and school chaos!  Let us serve you with a veggie brothy soup with cabbage, tomato, celery, onion, garlic, and herbs.  Less than 90 calories per serving!

Curried Chick Peas Curried Chickpeas! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and impacts of diabetes. It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, and curried spices.  About 180 calories per serving.

sesame hummus Sesame Hummus  NEW!!!   Home-made and delicious! Lemon, garlic, cumin, with an splash of sesame oil to intensify the flavor! Served with a stack of cucumber discs.  A very healthful and fulfilling snack or meal

PROTEIN WRAPS! This week, try our tasty and healthy  “Buffalo Wing”  Wrap! This may be our best wrap!   Roasted chicken with a bit of hotness. Then wrapped with a bit of blue cheese, red onion, celery, lettuce and couscous.  Wrapped in romaine leaves and/or tortilla.  We will include a hot dipping sauce if you need a bit more heat!  About  320-calories per serving and about 65 grams of chicken!  Can request no tortilla if received by Saturday!

Another personal favorite of many!  We make it creamy and smokey, just like Mom made it!  Did you know that split peas have the following health benefits, high fiber, lowers cholesterol, and high in potassium. About 180 cal/serving

 

Korean Bean Sprout Side Korean Bean Sprout Salad!  Very low calorie (less than 70 calories) and tasty with a light asian flavor. Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

      

  

Pumpkin Korn Soup!  Pumpkin Korn Soup(it seems zippier to spell it with a K).  A vegetarian southwest soup with surprising flavors:    jalapeno, black beans, bell pepper, corn, and onion, with a pumpkin soup base.  Many say its super! CauliflowerFennel Soup Roasted Fennel and Cauliflower Soup! This smooth, soothing soup will not only warm your taste buds, it will cure your gastro ailments.  Fennel provides an excellent source of potassium, vitamin C, and fiber. In addition, herbalists refer to fennel as an intestinal antispasmodic that relieves intestinal spasms or cramps.  This is a vegan, low-calorie, delicious meal!  About 160 cals per serving.

Carrot Bean Salad Green Bean & Carrot Salad!

It may sound bland, but it is really really tasty and fresh!  It includes some crunch of red radishes, red onion along with freshly blanched carrots and green beans.  Our zippy marinade and toasted sesame finish off this low-calorie treat.  (80 calories/serving).

Siam Soup Siam Coco-Ginger Soup – NEW!! A wonderful vegetable soup with tofu, a variety of veggies, including corn and an exotic broth flavored with lemon grass, jalapeno, Kaffir lime leaves, and coconut milk. Very healthy and calories are TBD.

Veggie Calico Veggie Calico Salad!  This is a raw zucchini salad with black beans, corn, bell pepper, green onions and a little avocado.  All coated with a zippy limey dressing.  Colorful and good for you! About 100 calories per serving due to the healthy fats in the avocado!.

   

 

Brocolli Floret Soup Broccoli Floret Soup!  Did you know that broccoli is a great source of calcium and protein?    This soup is creamy without any dairy.  The surprise is the broccoli remains in florets instead of being pureed.  It has greens, celery, garlic, and herbs, with broccoli florets.  A serving is about 150 calories with 8 grams of protein and 7 grams of fiber.

 Quinoa Salad Quinoa Salad– NEW!!   Quinoa has a wonderfully nutty light taste. It is actually a seed.  In fact its the only plant-based protein that provides all essential amino acids.  We are going to combine this gem with parsley, mint, green onions, almonds, and currants and splash it with a zesty lime dressing.  It’s gonna be good!  Calories – TBD

Summer Tex Mex Soup

Summer Tex-Mex Soup!  (similar to Pumpkin Corn Soup)  A vegetarian southwest soup with surprising flavors:    jalapeno, black beans, bell pepper, corn, and onion!  Lots of fiber and protein in such a fresh tasting soup!  (about 240 cals/serving, but incl lots
of fiber and plant protein).

Fresh Bean and Carrot Salad Green Bean & Carrot Salad!
It may sound bland, but it is really really tasty and fresh!  It includes some crunch of red radishes, red onion along with freshly blanched carrots and green beans.  Our zippy marinade and toasted sesame finish off this low-calorie treat.  (80 calories/serving).
   
 

Celery Bisque Celery Bisque – NEW!  Simple classic flavors that should be savored!  We blend leeks, celery and potato,  into a smooth gratifying puree and lace with lemon,  parsley and a touch of cayenne.  Let it fill your taste buds.  Includes some cream.  About 200 cals per serving.

 Tomato Cucumber Salad!  This is one of my favorites for FRESH and FLAVORFUL!  Similar to a Capri Salad without the diary.  This delight includes grape tomatoes,  cucumber, red onion, chopped basil and parsley, marinated in a sweet n tart vinaigrette and a peppercini topper.  Less than 100 cals/serving

Simply Veggie Soup Simply Veggie Soup!   I suggest ordering by the quart, because it’s that yummy and a great solution for breakfast, a snack, or lunch/dinner.  Only about 100 calories per serving!  Yet, it’s filled with flavors from onions, carrots, leeks, kale, corn,  celery, roasted sweet potato & butternut squash, cabbage, tomatoes, etc.  It’s a Caring Cuisine classic!

Vegetarian Chili (mild)! Many many flavors, some are even a secret, but the result is a hint of sweet-then-spicy!  Ingredients include mushrooms, beans, diced tomatoes, bell pepper, corn, celery, cilantro, chipolte peppers, and sun-dried tomatoes.  And, its only 180 calories/serving with tons of fiber!

Bulgar Dill Salad Bulgar Dill Salad!
So fresh and filling.  We start with coarse bulgar and chickpeas, then add cherry tomatoes, cucumber, sun-dried tomatoes, roasted red pepper, lots of dill, and a balsamic dressing.  It’s calorie-dense but filled with fiber! (about 250 cals/serving).

    

 

Greek Lemon Soup!    It’s got that greek thing going on… lots of lemon in a chicken broth base.  We will add some orzo, chick-peas, veggies and egg yolk (for richness).  A favorite of many soupers! Only 125 calories per serving!

 
Apple Slaw
 Apple Slaw!  Back by request, this is such a fresh change for a summer salad.  This sweet-spicy slaw has no dairy, but instead fills the senses with sweet-tart vinaigrette, apples, broccoli slaw, dried cherries and toasted walnuts.  This is really delicious!   About 125 cals/per serving

  

Red Pepper Dip Red Pepper Dip! Home-made and delicious! Lemon, garlic, cumin, chickpeas, and roasted red peppers! Not too spicy.  Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Red Pepper SoupRed Pepper Soup! This soup is a favorite of many of our Souptarians! It contains a confrontation of roasted red peppers, garlic, onions, spices, and organic cream.  We’ll provide a toasted almond topper, unless you request otherwise.  About 180 cals/serving.      

Italian Collards Italian Collards!  Inspired from my mentor Trainer, Trent!  It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more.  May contain a bit of bacon fat, if needed. About 130 calories per serving.

 

Toasted Rice Soup!  Amazing taste with toasted brown rice, spinach, onions, lemon zest, and a hint of nutmeg in a vegetable broth.  I’ll include some Parmesan cheese as a topper to make this a SOUPer delight!   (200 calories/serving, inc the cheese).

 
Roasted Beets
 Roasted Beet Salad with Herbs.  This a lovely side dish that can be served cold or warm.  We supply a tart dressing super-flavored with dill and mix it with beautiful deep red beets, slices of orange, and sweet onion and a sprinkle of walnut.  Great alone or on a bed of greens.   About 130 calories per serving.

 

Yummy DipTzatziki Dip!  Big and bold step for us to offer a Greek yogurt-based dip!   I promise this will taste fresher than ANY store-bought version.  cucumber, lemon, dill, mint in a yogurt-based dip!  YUMMY!  Bell pepper dippers for you!
