Creamy Mexican Corn Soup NEW!!  I was struggling with a soup menu given this heat wave.   After contemplating a chilled soup, I came up with this new recipe!  I think it will be terrific, so let’s try it together!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Cucumber Salad Marinated Cucumber Side NEW!!.  Simple, refreshing, and will last for a long time (but I bet you gobble it up before that).  This is something my Grandma served up during most Sunday suppers.  Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing.  They’ll get marinated and a bit pickled and oh so tasty.  Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Healing Cabbage Soup Souper-Power Cabbage Soup!   You know this if you have ever treated yourself to cabbage soup when you’ve been sick, or on a cleanse.  It has souper powers!  And how appropriate with this heat-wave and school chaos!  Let us serve you with a veggie brothy soup with cabbage, tomato, celery, onion, garlic, and herbs.  Less than 90 calories per serving!

Curried Chick Peas Curried Chickpeas! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and impacts of diabetes. It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, and curried spices.  About 180 calories per serving.

sesame hummus Sesame Hummus  NEW!!!   Home-made and delicious! Lemon, garlic, cumin, with an splash of sesame oil to intensify the flavor! Served with a stack of cucumber discs.  A very healthful and fulfilling snack or meal

PROTEIN WRAPS! This week, try our tasty and healthy  “Buffalo Wing”  Wrap! This may be our best wrap!   Roasted chicken with a bit of hotness. Then wrapped with a bit of blue cheese, red onion, celery, lettuce and couscous.  Wrapped in romaine leaves and/or tortilla.  We will include a hot dipping sauce if you need a bit more heat!  About  320-calories per serving and about 65 grams of chicken!  Can request no tortilla if received by Saturday!

Veggie-Barley Soup Barley-Veggie Soup!  You’ll feel so good after enjoying this soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too.  Lots of veggies, lots of flavor; its that simply delicious. About 160 calories/serving.

Asian Slaw Oriental Slaw!  It’s raw, with a delicate sesame dressing. Cabbage is mixed with green onion, carrots, bean sprouts, toasted sesame seeds, almonds, bell pepper, jalapeno, and cilantro. A nice low-calorie side or snack at 80 calories per serving.

Apricot Bulgar Pilaf Bulgar w/ Apricot Pilaf!  Can be eaten cold or warm, this savory pilaf has plenty of almonds, apricot, cranberries, onion, parsley and flavored with allspice, cinnamon, etc.  (about 180 calories and filled with whole grains and fiber).


Red Pepper Hummus  Red Pepper Dip! Home-made and delicious! Chick peas, lemon, garlic, cumin, and roasted red peppers! Not too spicy.  So good it doesn’t need tahini. Served with a stack of celery, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Another personal favorite of many!  We make it creamy and smokey, just like Mom made it!  Did you know that split peas have the following health benefits, high fiber, lowers cholesterol, and high in potassium. About 180 cal/serving

 

Korean Bean Sprout Side Korean Bean Sprout Salad!  Very low calorie (less than 70 calories) and tasty with a light asian flavor. Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

      

  

Pumpkin Korn Soup!  Pumpkin Korn Soup(it seems zippier to spell it with a K).  A vegetarian southwest soup with surprising flavors:    jalapeno, black beans, bell pepper, corn, and onion, with a pumpkin soup base.  Many say its super! Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, pepitos, and many flavors to provide a flavorful Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.

 

Italian Collards

Italian Collards!  Inspired from my mentor Trainer, Trent!  It’s hearty, flavorful and oooo so good for you.  Collards simmered with onions, tomatoes, garlic, oregano, red pepper flakes, and more.  Contains a bit of bacon fat for that rich taste.  About 130 calories per serving.

Black Bean Dip Spicy Black Bean Dip! A creamy healthy bean dip with red onion, tomato, garlic, cumin and Jalepeno chili.  It’s a filling and healthy snack with lot’s of  fiber, protein and joy. Served with celery sticks.

Awesome Asian Soup Awesome Asian Soup!  Asian flavors…a little hot, a little sour. Flavors include: tofu, ginger, garlic, mushrooms, bok choy, bamboo shoots, red bell pepper, water chestnuts, and cilantro.  This soup is great for calorie-consciousness people at only 90 calories per serving.

Mediterranean Lenil Salad Mediterranean Lentil Salad! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and tons of spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.

   

 

Corn Potato Chowder Corn & Potato Chowder! This chowder needs NO meat;  just potato, corn, onions, LOT’S of bell pepper, parsley and perfect seasonings.  It has a touch of heat and eastern seaboard seasonings.  This soup includes limited dairy. It’s well worth the 250 calories/serving.

Spicy Sweet Potato Soup!  This is a favorite of Trent Mitchell!  And an awakening to many.  This brothy soup is quite exotic with sliced sweet potatoes, tomatoes, coriander, cumin seed, turmeric, and fresh ginger.  (Only 100 calories/serving).

Herby Chickpea Salad Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!

  
   

Carrot n Ginger Bisque!    
This is a favorite of mine!  Simple, smooth, super-comfort food!  Carrots, cream, zippy ginger, and sweetened with caramelized onion. This includes dairy, but I promise to keep it light!  A great source of beta-carotene! Only 125 calories per serving!

 

Mexican Quinoa Mexican Quinoa Salad! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn, filled-with protein from the quinoa, and a slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving

Red Pepper Dip! Home-made and delicious! Lemon, garlic, cumin, chickpeas, and roasted red peppers! Not too spicy.  Served with a stack of cucumber strips, it makes for a flavorful and healthy snack filled with fiber, protein and joy.
