Creamy Mexican Corn Soup NEW!!  I was struggling with a soup menu given this heat wave.   After contemplating a chilled soup, I came up with this new recipe!  I think it will be terrific, so let’s try it together!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Cucumber Salad Marinated Cucumber Side NEW!!.  Simple, refreshing, and will last for a long time (but I bet you gobble it up before that).  This is something my Grandma served up during most Sunday suppers.  Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing.  They’ll get marinated and a bit pickled and oh so tasty.  Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Healing Cabbage Soup Souper-Power Cabbage Soup!   You know this if you have ever treated yourself to cabbage soup when you’ve been sick, or on a cleanse.  It has souper powers!  And how appropriate with this heat-wave and school chaos!  Let us serve you with a veggie brothy soup with cabbage, tomato, celery, onion, garlic, and herbs.  Less than 90 calories per serving!

Curried Chick Peas Curried Chickpeas! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and impacts of diabetes. It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, and curried spices.  About 180 calories per serving.

sesame hummus Sesame Hummus  NEW!!!   Home-made and delicious! Lemon, garlic, cumin, with an splash of sesame oil to intensify the flavor! Served with a stack of cucumber discs.  A very healthful and fulfilling snack or meal

PROTEIN WRAPS! This week, try our tasty and healthy  “Buffalo Wing”  Wrap! This may be our best wrap!   Roasted chicken with a bit of hotness. Then wrapped with a bit of blue cheese, red onion, celery, lettuce and couscous.  Wrapped in romaine leaves and/or tortilla.  We will include a hot dipping sauce if you need a bit more heat!  About  320-calories per serving and about 65 grams of chicken!  Can request no tortilla if received by Saturday!

Awesome Asian Soup!  awesome asian soupAsian flavors…a little hot, a little sour. Flavors include: tofu, ginger, garlic, mushrooms, bokchoy, bamboo shoots, red bell pepper, water chestnuts, and cilantro.  This soup is great for calorie-consciousness people at only 90 calories per serving.

Mexican Quinoa Salad! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn, filled-with protein from the quinoa, and a very slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving.

brazilblackbean Brazilian Black Bean Soup!  Brazil… a bit of exotic latin flavor in a hearty, healthy soup. And, I’m told it freezes well. This is a semi-pureed soup with a bit of garlic, cumin, coriander and laced with sherry and orange juice, and a bit of red onion and bell pepper. Bacon topper, unless requested otherwise by Friday.  Calories are 200 per serving.

sesame beans Sesame Green Beans!  Can be served cold or hot, and best when eaten with your fingers. Fresh green beans, blanched and combined with a soy-dressing and sesame seeds!   Super low-calorie (less than 80 cals/serving) makes this a sin-less side dish.

Roasted Squash Roasted Squash w/ Pecan Soup! Pureed roasted butternut squash,  onions and pecans blended perfectly!  Includes a dash of cream to make is smooth and soothing. About 150 cals/ serving. 

 

Herby Chickpea Herby Chickpea Salad!   So much flavor wrapped around a bean, including, lemon, basil, parsley, pepper, garlic and Parmesan cheese.  Kinda nutty, tart, and healthy! Beans are dense in calories but filled with good fiber, protein, and nutrition.  Don’t be scared at the 250 calories, just savor and realize its a meal!

      

  Tomatillo Soup Tomatillo Soup!!  This is a vegan version of a traditional Posole. Slow-cooked tomatillos w/ hominy, a variety of chilies, diced tomatoes, cilantro, Pepitos, and many flavors to provide a flavorful tart Mexican treat.  This dish would be excellent for breakfast served with a poached egg on top. About 250 cals per serving.

 

 

Tomato Cucumber Tomato Cucumber Salad!  This is one of my favorites for FRESH and FLAVORFUL!  Similar to a Capri Salad without the diary.  This delight includes grape tomatoes,  cucumber, red onion, chopped basil and parsley, marinated in a sweet n tart vinaigrette and a peppercini topper.  Less than 100 cals/serving.

 

Pomegranate Hummus   Hummus w/ Pomegranate! Pomegranates are back in season for a limited time!  If you have never tried this middle-Eastern combo, ya just gotta try it!  Home-made and delicious hummus with a sprinkle of tart-sweet fresh Pomegranate!  Served with a stack of celery stix, it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Chinese Chicken Wrap PROTEIN WRAPS! This week, try our Chinese Chicken Wrap.  Tasty and healthy.  Fresh roasted chicken with carrots, water chestnuts, green onions, and a bit of cabbage and sesame.  We provide an orange-ginger dipping sauce on the side. Veggie-Barley Soup Barley-Veggie Soup!  You’ll feel so good after enjoying this soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too.  Lots of veggies, lots of flavor; its that simply delicious. About 160 calories/serving.

Asian Slaw Oriental Slaw!  It’s raw, with a delicate sesame dressing. Cabbage is mixed with green onion, carrots, bean sprouts, toasted sesame seeds, almonds, bell pepper, jalapeno, and cilantro. A nice low-calorie side or snack at 80 calories per serving.

Apricot Bulgar Pilaf Bulgar w/ Apricot Pilaf!  Can be eaten cold or warm, this savory pilaf has plenty of almonds, apricot, cranberries, onion, parsley and flavored with allspice, cinnamon, etc.  (about 180 calories and filled with whole grains and fiber).

 Red Pepper Soup! This soup is a favorite of many of our Souptarians! It contains a confrontation of roasted red peppers, garlic, onions, spices, and organic cream.  We’ll provide a toasted almond topper, unless you request otherwise.  About 180 cals/serving.       

Pickled Carrots Pickled Carrots – Improved!  This is a personal family recipe from our mid-west family.  Coin-diced carrots, with onion and pepper, then pickled in a savory-secret blend.  Thank you Grandma! These gems keep for a long time, so you can store and enjoy for more than a week. Less than 100 calories/serving.

Another personal favorite of many!  We make it creamy and smokey, just like Mom made it!  Did you know that split peas have the following health benefits, high fiber, lowers cholesterol, and high in potassium. About 180 cal/serving

 

Korean Bean Sprout Side Korean Bean Sprout Salad!  Very low calorie (less than 70 calories) and tasty with a light asian flavor. Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor!  This week’s salad includes: cucumber, roasted beets, green peas, raisins, toasted almonds, carrots, and celery, with a homemade creamy tahini vinaigrette.  (less than 250 calories/container).  You can ADD 64 grams of fresh roasted chicken to your salad for only $1.50 (please order by Saturday).

Hand-crafted Protein Bars Natural Protein Bars!  Handy, tasty, healthy, and chemical/ preservative-free (so much better than the commercial ones that stay on the grocery shelf for a year!).  Each bar contains 15 grams of protein and only 180 calories.  This is a great snack/breakfast solution for busy day. This week flavors, as available:   Peanut-Toffee or Apricot – Pistachio, or Banana-Berry!

ENERGY BROWNIES NEW!!  We injected a bit more energy into our brownies with a blast of espresso!     Chocolatey, no nuts. A generous 3-in square.  Think of it as an occasional splurge or as an entire meal  <wink>. Clients suggest they are best eaten frozen!!!  WOWZA!!!!!

Soup Calendar: 9/16 – 9/20

CauliflowerFennel Soup Roasted Fennel and Cauliflower Soup! This smooth, soothing soup will not only warm your taste buds, it will cure your gastro ailments.  Fennel provides an excellent source of potassium, vitamin C, and fiber. In addition, herbalists refer to fennel as an intestinal antispasmodic that relieves intestinal spasms or cramps.  This is a vegan, low-calorie, delicious meal!  About 160 cals per serving.

Carrot Bean Salad Green Bean & Carrot Salad!

It may sound bland, but it is really really tasty and fresh!  It includes some crunch of red radishes, red onion along with freshly blanched carrots and green beans.  Our zippy marinade and toasted sesame finish off this low-calorie treat.  (80 calories/serving).
   

 

Pizza Soup!  It’s got an Italian zip, with more!  A thick soup with pureed zucchini and onion, a richness from a bit of Italian chicken sausage and extra veggies! Kinda like a soup version of a pizza without the cheese or bread!
