Creamy Mexican Corn Soup NEW!!  I was struggling with a soup menu given this heat wave.   After contemplating a chilled soup, I came up with this new recipe!  I think it will be terrific, so let’s try it together!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Cucumber Salad Marinated Cucumber Side NEW!!.  Simple, refreshing, and will last for a long time (but I bet you gobble it up before that).  This is something my Grandma served up during most Sunday suppers.  Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing.  They’ll get marinated and a bit pickled and oh so tasty.  Excellent for nibbling when the hunger or mood strikes.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Healing Cabbage Soup Souper-Power Cabbage Soup!   You know this if you have ever treated yourself to cabbage soup when you’ve been sick, or on a cleanse.  It has souper powers!  And how appropriate with this heat-wave and school chaos!  Let us serve you with a veggie brothy soup with cabbage, tomato, celery, onion, garlic, and herbs.  Less than 90 calories per serving!

Curried Chick Peas Curried Chickpeas! Chickpeas (garbanzo beans) have so many nutrients, and aid in lowering cholesterol, weight loss and impacts of diabetes. It’s a dense source of protein and fiber. This recipe will be tasty with the addition of onions, tomatoes, and curried spices.  About 180 calories per serving.

sesame hummus Sesame Hummus  NEW!!!   Home-made and delicious! Lemon, garlic, cumin, with an splash of sesame oil to intensify the flavor! Served with a stack of cucumber discs.  A very healthful and fulfilling snack or meal

PROTEIN WRAPS! This week, try our tasty and healthy  “Buffalo Wing”  Wrap! This may be our best wrap!   Roasted chicken with a bit of hotness. Then wrapped with a bit of blue cheese, red onion, celery, lettuce and couscous.  Wrapped in romaine leaves and/or tortilla.  We will include a hot dipping sauce if you need a bit more heat!  About  320-calories per serving and about 65 grams of chicken!  Can request no tortilla if received by Saturday!

Celery Bisque Celery Bisque!  Simple classic flavors that should be savored!  We blend leeks, celery and potato,  into a smooth gratifying puree and lace with creme friache,  lemon,  parsley and a touch of cayenne.  Let it fill your taste buds.  About 200 cals per serving.

 

 Smokey Beans n Kale! Beans n Kale This recipe has been handed down to me from an admired foodie.  So it has to be good!  Heck, it  has bacon in it… so no doubt!  Home-soaked white beans simmered with kale, onion, garlic, red pepper flakes, and bacon.  You get that southern feeling?  I do too!

 

 

Kenya Curried Soup!  Kenya Curried Soup Perfect blend of spices and texture .  This soup is a bit sweeter than a Dahl, and boasts flavors including tomatoes, kale, black-eyed peas, corn, bell pepper, sweet curry flavors, and coconut milk. This will be a new soup for many of you since its been a long while since we cooked it up!.  Be adventurous! Lot’s of taste and will fill you up at 250 calories per serving.

Toasted Rice Soup Toasted Rice Soup!  Amazing taste with toasted rice, spinach, onions, lemon zest, and a hint of nutmeg in a vegetable broth.  I’ll include some Parmesan cheese as a topper to make this a SOUPer delight!   (200 calories/serving, inc the cheese).

Apple Slaw Apple Slaw!  Back by request, this is such a fresh change for a summer salad.  This sweet-spicy slaw has no dairy, but instead fills the senses with sweet-tart vinaigrette, apples, broccoli slaw, dried cherries and toasted walnuts.  This is really delicious!   About 125 cals/per serving

   

 

Greek Lemon Greek Lemon Soup!    It’s got that greek thing going on… lots of lemon in a vegan- chicken broth base.  We will add some chick-peas, veggies and egg yolk (for richness).  A favorite of many soupers! Only 125 calories per serving!

 

Quinoa Pilaf!  Kinda sweet, nutty and tart, with nuts, currents, green onion, basil, parsley, with a vinaigrette dressing. Perfect for this time of year and certainly worth trying!  It’s about 150 calories and contains plenty of protein from the quinoa.

Awesome Asian Soup Awesome Asian Soup!  Asian flavors…a little hot, a little sour. Flavors include: tofu, ginger, garlic, mushrooms, bok choy, bamboo shoots, red bell pepper, water chestnuts, and cilantro.  This soup is great for calorie-consciousness people at only 90 calories per serving.

Mediterranean Lenil Salad Mediterranean Lentil Salad! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and tons of spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.

   

 

Corn Potato Chowder Corn & Potato Chowder! This chowder needs NO meat;  just potato, corn, onions, LOT’S of bell pepper, parsley and perfect seasonings.  It has a touch of heat and eastern seaboard seasonings.  This soup includes limited dairy. It’s well worth the 250 calories/serving.

We have a couple of seasonal changes to try out with you.  First, many of you have mentioned that the warmer climate of summer makes soup a secondary choice over our wraps and salads,  so this week we will be offering one FANTASTIC soup.  I’m eagor to hear your feedback.

Simply Veggie Soup Simply Veggie Soup!   I suggest ordering by the quart, because it’s that yummy and a great solution for breakfast, a snack, or lunch/dinner.  Only about 100 calories per serving!  Yet, it’s filled with flavors from onions, carrots, leeks, kale, corn,  celery, roasted sweet potato & butternut squash, cabbage, tomatoes, etc.  It’s a Caring Cuisine classic!

Bean Sprout Salad
 Korean Bean Sprout Salad!  Very low calorie (less than 70 calories) and tasty with a light asian flavor.  Includes sesame oil, rice vinegar, green onions, toasted sesame seeds, slivered red pepper, and of course, blanched bean sprouts.  I hope you enjoy it!

  

Herby White Bean Spread!  Hand-crafted never tasted better.  Home-soaked white beans with lemon, rosemary, sage and sun-dried tomatoes. Served with a stack of cucumber, it makes for a flavorful and healthy snack filled with fiber, protein and joy (about 250 calories/container).
