Hot n Sour Soup

Hot n Sour Soup!  Asian flavors…a little hot, a little sour. Flavors include:  ginger, garlic, mushrooms,greens, bamboo shoots, red bell pepper, water chestnuts, and cilantro.  This soup is great for calorie-consciousness people at only 90 calories per serving

Mediterranean Lentils Mediterranean Lentils! Another favorite with lots of flavor and fiber.  A great source of protein from the lentils and garnished with carrots, parsley, bell pepper, red onion, and tons of spices.  Each serving is about 16 grams of protein, 15 grams of fiber and about 190 cals.

Red Pepper Dip w/ Stix! Home-made and delicious! Lemon, garlic, cumin, and roasted red pepper with blended chickpeas! Served with a stack of celery stix, it makes for a flavorful and healthy snack filled with fiber, protein and joy

Potato Leek Soup

Potato Leek Soup! So soothing, creamy and tasty … without any dairy.  We roast potatoes w/ skin and garlic, combine it with sauteed leeks, and a bit of corn.  Then we season it with parsley, thyme and marjoram. Semi-pureed this time.  Calories are about 180.

Marinated Cucumbers Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my Grandma served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty.  And, the the calories are less than 80 cals a serving, so it hardly counts!

Chicken Tortilla Soup

California Tortilla Soup! The flavorful brothy soup includes zucchini, celery, carrot, onion, bell pepper, diced tomato,and cilantro to give you the perfect taste-bud experience without the calories!  We include a bit of chicken, and a side of corn tortilla crumbles.   About 190 cals/serving with the tortilla!

Seasonal Kale Side Seasonal Kale Salad – NEW!!!  Just a few seasonal additions.  Let’s add some apple, fennel, dried cranberries, and olives to a rubbed raw kale salad!   About 150 cals per serving.

Barley Veg Soup Barley-Veggie Soup!  You’ll feel so good after enjoying this soup. The taste alone is nice but the nutrition and super fiber content will make your body happy too.  Lots of veggies, lots of flavor; it’s that simply delicious. About 160 calories/serving.
 
Mexican Quinoa Mexican Quinoa! I love this deli-side –  it’s light, zippy, and filled with good proteins!  It’s naturally sweet from the corn and red peppers, filled-with protein from the quinoa, and a very slight spiciness from the chili powder, cilantro, lime juice, cumin, and sunflower seeds.  It’s dense with nutrition at 200 cals/serving.

Brazilian Black Bean Soup!  Brazil (w/o the mosquitoes): warm but mild with a bit of exotic latin flavor in a hearty, healthy soup. And, I’m told it freezes well. This is a semi-pureed soup with a bit of garlic, cumin, carrots, coriander and laced with sherry and orange juice, and a bit of bacon crumbles! Calories are 200 per serving.

Best Coleslaw Best-Ever Coleslaw!  This the tart-sweet slaw you find at the best BBQ joints in the south.  There is no mayo in this dish, so it can last (and improve) for over a week!  Includes onion, a bit of carrot, and an outstanding marinade!  (less than 90 calories per serving)
