Mexican Creamy Corn Soup!  We start with a creamy corn  puree (yes, we use right off the cob!), and then add a bit of cream, corn, diced tomato, cilantro, lime and chipolte.   Best served cold, but can be heated if you prefer!  About 170 cals/serving.

Calico Veggies! This is a super fresh and flavorful delight, including zucchini, black beans, corn, green onions, cilantro, a little avocado (at the bottom), with a limey dressing. Colorful and good for you! About 90 calories per serving due to the healthy fats in the avocado!

Marinated Cucumbers! Simple, refreshing, and will last for a long time (but I bet you gobble it up before that). This is something my family served up during most Sunday suppers. Sliced cucumbers and sweet onions in a home-made sweetened vinegar dressing. They’ll get marinated and a bit pickled and oh so tasty. And, the the calories are less than 80 cals a serving, so it hardly counts!

Red Pepper Hummus n stix! Home-made and delicious! Lemon, garlic, cumin, and roasted red pepper with blended chickpeas! Served with a stack of veggies; it makes for a flavorful and healthy snack filled with fiber, protein and joy.

Yummy Bowl! This week, try our Avocado Wrap Bowl! Protein-packed quinoa with tomato, roasted pepper, avocado, red onion topped with romaine. Less than 350 cals/serving and served fresh and tasty!!

Refresing Green Salad! Our BIG green salads are fresh, seasonal, and diversified with a variety of veggies, protein, fiber and flavor! This week’s salad includes: cauliflower, celery, garbanzo beans, cucumber, radish, red onion with a zesty Raspberry dressing. (less than 290 calories/container)

Hand-crafted Power Bars! Handy, tasty, healthy, and chemical/ preservative-free (so much better than the commercial ones that stay on the grocery shelf for a year!). Each bar contains 15 grams of protein and only 180 calories. This is a great snack/breakfast solution for busy day. Brownies!  Everyone needs a treat now and then!  Home-made and best eaten frozen, in my opinion! Just a few bites can satisfy your needs! Purely Chocolate!
